  1. This is the really insidious nature of celiac....while some people feel terrible if they eat gluten, others only feel marginally bad so it's all too easy to dismiss the danger of continuing to eat gluten after this diagnosis. And further....it's so difficult to get a solid, 100% diagnosis that yes, you do definitely have celiac disease. So it's easy to...
  2. I get all my kinnikinnick things online. $10 shipping for up to $200 in goods, I think it is. It's not worth it unless you order a certain number of items. www.kinnikinnick.com
  3. First of all, remember that Enterolab cannot diagnose celiac, only a predisposition to it and evidence of reaction to gluten. The ONLY thing that will currently diagnose "officially" celiac disease is a biopsy, which doctors are starting to suggest might not always be necessary. So you can never get an "official" diagnosis of celiac without a biopsy, although...
  4. How much of the liquid would you use in something like a cup of tea?
  5. So a lot of us seem to have problems even after going gluten-free or gluten-free/CF. I'm one of them. I'll feel better for a day or two, then it's like I go 10 steps back, almost like I was still eating gluten or casein. And I'm not, because I'm being so careful and I'm not eating out. But I was re-reading the first few chapters of the SCD book and...
  6. Ha ha...me too!! I've got all these cookbooks and I don't "cook" a lot anymore, especially now because I'm so limited and most of my favorite recipes involve either wheat or dairy. So I've lost what remaining interest I had, for the most part. I still look at recipes and cookbooks though, and kind of think "Oh, that sounds good...wouldn't that be nice...
  7. Gosh, I couldn't care less what others think. I mostly don't use the word "disease" because people kind of recoil at that word. So I'll mostly just say I'm allergic to wheat and can't eat it, (or even more abbreviated..."I can't eat wheat", and people kind of relate to that. Usually that's the end of it...rarely do people ever ask more about it. If they...
  8. I just try to be totally realistic about restaurants. They use wheat/gluten items in SO many foods, it's just second nature. Also we can't expect them to know all the little things gluten might hide in...they just aren't thinking along those lines. All they know is "did I add flour to this or that" and things like that. I believe they are thinking more...
  9. Nancy...how does the liquid splenda taste compared to the powdered one? I wonder why the liquid is made differently that the powdered stuff...
  10. Of course, the advantage of drinking COLD water is that your body expends energy (hence burning a few calories in the process) to "heat" it up. But the important thing is to drink the water, whatever the temperature!
  11. Exactly the same for me (gluten above, dairy below).
  12. The only Pamela's cookies I liked were the Spicy Ginger...something about having real ginger in it on the label. Not snaps, though...these are soft. I've found that not all items within a brand line are good, sometimes only this or that is good. You have to try things and figure out what you like. As for Van's waffles, I keep mine frozen and pop them...
  13. The water is always a challenge. But I'm really thirsty when I get up in the morning, so I get a 16oz glass of water and drink it in the bathroom while I'm getting ready. So that one goes does pretty easily, and that's 2 glasses worth right there (using an 8 oz glass as "one glass"). Another 16 oz at breakfast, taking vitamins etc. That one goes down...
  14. I LOOVVEE mashed potatoes with ketchup! And here's an intereting sandwhich I used to love...I first had it in the south of France, from a street vendor: A french roll with a fried veal cutlet and french fries in it. Boy was that one good!
  15. Why do you suppose they would be gluten free in the U.S. but not Canada....why on earth would they change that aspect of the cereal and ADD an allergen such as gluten???? It makes no sense!!
  16. Your candy bars sound a bit like the Lara bars, which I really love! I just wish they had more protein.
  17. I agree completely about the water and the 5 or 6 meals. You don't get hungry, so you aren't driven to binge!
  18. Oat is a grain, and it does have its own unique protein. Therefore, like wheat/oats/barley, there is the possibility that a person who reacts to the wheat gluten protein could also react to the protein in oats. This is separate from the possibility of cross-contamination. Like with so many other things to do with celiac disease, this is yet another thing...
  19. I'm new to this, but I've been trying a lot of the Kinnikinnick things, and they're surprisingly GOOD. Here's what I've tried and liked so far: Animal cookies (fabulous, crispy, perhaps better than the "real" ones!) K-toos cookies (oreo clones...extremely good) English muffins (not really like an English muffin, but GOOD toasted--I'd like them if...
  20. My favorite things are all southern things I learned from my east Texas mom....Collards with ham (yum!), fried okra (coated with corn meal) (triple yum!), and cornbread dressing....it has boiled egg, celery, onion, some chopped chicken, salt/peper (to die for). My non-southern hubby and my kids adore these....although the okra took awhile for them to...
  21. Isn't that the truth (intestines running the show!). I seem to be doing well with the coconut stuff so far, too. I'm making my second batch of yogurt tonight. I'm happy with the low fat milk so I'm sticking with that. I put a bit more honey in tonight and most, but not all, of the gelatin. The last batch was a bit soupy, although I didn't really mind...
  22. Oh do tell....add up all your Dr. Green bills, also the testing bills, and tell us how much you had to spend to find out what you found out. Even if insurance will pay for some/all of it, I'd love to know the $$. As for headaches, I was really plagued with them starting in my early 30's. When Imitrex first came out it was such a miracle, although it...
  23. Coconut flour??? Where did you get that...I've never seen or heard of it! What have you read about coconut? I know a lot of people say it's very good...omega 3's, and some compound which is very good for you (I forgot the name of it). I got some coconut oil to cook with (the solid stuff) which I use instead of butter for doing eggs, etc. And I'm using...
  24. I just thought of something else....when I showed up with the 2 genes, I asked Dr. Fine and he confirmed that one of my two genes would definitely go to my kids (since each parent contributes one of their own two genes). So I know before testing that my two kids got either my celiac or my gluten gene. The question is, which one did they get, and what kind...
  25. I have a daughter and a son. Neither of them has the digestive and other issues I had. HOWEVER....from all my reading I certainly see some suspicious things here and there. Nothing big yet, but things to watch. I think I'll eventually get the gene test for both of them and start there, just so they'll know whether or not they have the predisposition...
