  2. Has anyone read anything about why you would peel fruit (like apples) and not eat the peel? I love to make applesauce....I usually just whap an apple corer/slicer thru an apple, cut the pieces into chunks, and throw them into a slow cooker. It will be a lot more time consuming to peel the apples, and besides, the applesauce tastes so good with the peel...

Since the theory is that those areas most recently exposed to gluten/wheat would have the HIGHEST rates of celiac disease, and those areas which have eaten gluten the longest have the lowest rates (because natural selection over several thousand years has been eliminating the celiacs!!!), I would expect the very highest rates to be in Native Americans!!!...

  6. After reading all my celiac realted books, they keep stressing that celiac disease has a higher prevalence in people with Northern European/Irish/Italian heritage. I'm curious about that....what are your backgrounds on both parents' sides? I'll start....for me, Swedish on my Dad's side, and on my mom's side Germanic/Russian/English. So I definitely fit...

  11. I just tried the animal crackers I got from Kinnikinnick....these are FABULOUS and every bit as good as the "real" ones (in the little zoo boxes). I've always loved those, and these are just as good, taste the same if not better, are nice and crunchy and fresh tasting. I'm really impressed they could do this!   12. I found the book about a week ago when I was in Barnes & Noble, so I bought it. It was so fascinating I read thru the whole thing in one evening. It just makes so much sense to me! But what I take issue with is a lack of desire to FIND OUT when they are faced with a puzzling patient with symptoms they can't figure out. And if ALL OF US can figure out so much...

  20. Same thing used to happen to me sporadically....thank goodness it wasn't daily! And often the attacks would strike in the middle of the night, too! I'd have D but also be feeling like I was going to throw up, so I'd be sitting there with a garbage can nearby cuz I sure couldn't get up from where I was sitting! What I can't believe now that I look back...

    Jen...what kind of psyllium do you use, and how much? I had always heard that psyllium was such a small amount it wasn't all that useful, but I've never tried it.

Barb....you don't mention what you are currrently eating, but here's what I found with myself: Feeling depressed and deprived about the whole thing (and I not only have to eliminate gluten, but dairy as well....not much fun stuff left to eat for me!!), I started checking out all the gluten free goodies out there...the cookies, crackers, chips, cakes.......
  23. Outback is great, although you have to read the menu carefully. It has a lot of the regular items on it, except you have them remove certain things, such as sauce on the veggies, etc. Our waitress was very nice, but apparently hadn't dealt with this before so she didn't know much. I had the brownie dessert and it was great, except the ice cream messed...
