I really think restaurants are a minefield....after all, pretty much the only thing the cook's etc. would know is that you can't eat wheat. Period. They don't really know what gluten is and don't know all the items and names it can hide under. My feeling about Dr. Green's book was that it wasn't particularly original, and it really didn't contain anything new and enlightening. On my list of "celiac books to read" it would probably rate at the bottom of everything I've read thus far. My tests took exactly 2 weeks. If you are doing the gene test as part of the larger celiac panel, I believe that one is sent out to another place, so they probably wait until it comes back to compile all the results. There are so many symptoms and other possible disorders connected to celiac, it's always hard to know what is going on. Getting the tests... -

My mom is very careful with mayonnaise....she gets a good one from Trader Joe's. As for vinegar, she only gets it if she knows the source of the vinegar. I don't know if she has had trouble with these items or if she's still just super-careful. When she was first diagnosed 40 years ago, labeling was terrible and she really had to be careful.

I think you're so right! The gluten free goodies don't have gluten, but they are high high high in sugar and a whole bunch of icky sounding ingredients. They are definitely NOT health foods. I agree with you 100%. When I was eating gluten, it definitely set me up for cravings and binging on things. Wheat/gluten has addictive properties too, which probably explains why America eats so much of it, every day, almost every meal. Gluten druggies!

Your Enterolab results should have had the info I'm posting below. Read all you can and then do the diet absolutely seriously. You might also keep an eye out for other possible sensitivities....like casein (dairy protein). I found I had to give up both gluten AND all dairy. If you can stick to the diet properly for a good amount of time, then a small cheat with gluten and/or dairy will definitely show you a strong reaction... -

Now I'm getting depressed again. One thing after another gets tossed out of my diet due to gluten or casein. Let'se see now...I can eat eggs, chicken, some fish, veggies but not nightshades or anything with starch, no rice, no this, no that. No wine! One of my few pleasures that was left! Time for a pity party I guess. Boo hoo hoo -
Wise words! We're much better off not fighting the inevitable! When I recently got to that point, where eating the food isn't worth the upset and pain associated with it, then food loses a hold over you and it's actually fairly easy to stay away from things. At least, that's what I'm finding lately. I suppose it could change....but I don't think it will...

Casein is the milk protein, whereas lactose is the milk sugar. Two completely different things. I supposed you could actually be both at the same time. I also had my worst reactions from milk and ice cream. In fact, the thing that made me the sickest was milk and cereal (I loved Wheat Chex!). No, most doctors you encounter would not know a thing about Enterolab. Doctors study specific, recognized methods of testing in medical school in their 10 minutes on celiac disease, and Enterolab is NEW. It makes perfect sense to me. Awareness is the key....but knowing the genes from both parents is great because then you really have a firmer idea. Obviously if you have been diagnosed celiac you have at least ONE gene, but if like me, you find out you have TWO genes, then you know for sure your kids have at least one problem gene. Nikki...I'm curious...are doctors in the U.K. any more knowledgeable than they are here (which is not much in most cases!) in terms of diagnosing celiac? Is there more awareness there? It's such a battle here, it often seems like the only ones who know much and are clued into this are the celiacs themselves!

Wow, well that's interesting about a 10 day time frame. I guess I have never considered that...my reactions are fairly quick...within a day for the worst of it, and then I guess I always figured it was over and something else might be bothering me. Or perhaps....and does this make sense???.....after a major gluten episode maybe the residual effect of that...

This really is like a huge can of worms. I can see my major problems were with gluten and dairy, but as I was eating most things I liked, it was just a snowball effect most likely. So I eliminate gluten and dairy, and all the other stuff comes to the forefront. You mentioned in your signature about sugar...I also think that affects me in a huge way. But... -

After Enterolab diagnosed me as positive for casein, I asked them about it...here's the reply: "If you do not take gluten and casein out of your diet, you could eventually incur intestinal damage. Dr. Fine encourages a lifetime elimination of both gluten and casein once you are positive. You may not have the same symptoms after a period of elimination... -
