Sometimes I wonder if I have any self-control left in me at all! I did so well on Saturday, and then blew it royally yesterday at a barbecue and then didn't do so well today either. I think there's too much unknown about celiac and gluten sensitivity for anyone to give a definitive answer. I have my opinion, based on personal experience rather than science. I think that some people are sensitive to gluten as Carla explained. It can come from things like Lyme Disease, a leaky gut due to overuse of antibiotics or other medical conditions...

I had terrible edema (just like jerseyangel's - pitting) and was finally diagnosed with a kidney disease. Going fanatically gluten-free has put my disease into remission and I have no more edema. Thanks, I've been there and back. I discovered the same thing - there are lots of organic and "natural" options. I had great luck at Earth Faire and Ingles getting groceries and we just ate out once at a place called the Flat Rock Grill. The server and chef were both knowledgable and I had a simple, but good meal.

You might also have another food intolerance. I had horrible arthritis at age 32. (And Lupus was suspected.) It went completely away when I eliminated gluten, dairy, eggs, soy, beans, nightshade vegetables, peanuts, red meat and a few other minor things. I have added everything back except gluten, dairy and soy, and don't eat eggs unless baked into something... -

I was just in Disneyworld last month and it was great. You can get a detailed list of all the foods by emailing disney. (I'm out of state right now and can't tell you how to do that, but hopefully someone will come along and give you that info.) We like Clif Nectar bars - especially the chocolate walnut flavor. What about little individual packages of peanuts, cashews or almonds? Bumble Bars are also good if you can find them. Homemade trail mix - nuts, dried fruit and chocolate chips, in sandwich bags works too. -

I just looked at their gluten-free menu online. The sweet potato fries aren't on the gluten-free menu and one item on the menu says to order it without the sweet potato fries to make sure it's gluten-free. I'm going to Asheville, NC later this week and they have a CIP there. I'm excited, since we have nothing like this out West.

Welcome Kassandra! Glad to have you join us. It looks like you might need to have a little more protein with each meal. That might help you avoid cravings for things like chocolate chips. Donna - I encourage you again to get tested either through Enterolab or your doctor. If you are gluten intolerant or Celiac, you're hurting yourself to eat that...
