    I folded egg whites in to make it a little fluffier and also added a little extra baking powder. Then I sliced into two sections and made a cream filling to put in between and on top with some fresh fruit. It was much tastier than the first one I made with regular icing. Around Toulouse there are some stores that have individuals that do gluten-free cooking courses and maybe someone would also do baking?     I had no problems eating items from Tesco or Sainsbury or any other gluten-free items from the UK but I am not extremely sensitive to small amounts of Gluten so I can not verify their contents.     Since you are visiting mainly larger cities I think you will be able to find some good eating options. Plus, the tour guide should speak the languages and be able to assist with your dietary needs. The tapas bars are really fun!     I dont see any ingredients listed on the box of parchment paper! Before I use it again, does anyone know if it could possible contain a Gluten ingredient. I cant imagine it does but I am always suprised by the items that have hidden Gluten. Thanks, Theresa
