I folded egg whites in to make it a little fluffier and also added a little extra baking powder. Then I sliced into two sections and made a cream filling to put in between and on top with some fresh fruit. It was much tastier than the first one I made with regular icing. We are going on a Med cruise on Carnival in May. Its also my first cruise since being gluten-free. Our major stops are in Italy, Turkey and Greece. My largest concern is eating lunch in various countries and on a tight time line. I had no problems eating items from Tesco or Sainsbury or any other gluten-free items from the UK but I am not extremely sensitive to small amounts of Gluten so I can not verify their contents. I took my daughter to the theme park PortAventura in Spain for Halloween. I usually do not expect to find Gluten Free options when I am traveling and usually come as prepared as possible. But, I was pleasantly suprised to find that the theme park has various restaurants that offer a Gluten free meal - it was fantastic!!! The park is about an hour south...

Since you are visiting mainly larger cities I think you will be able to find some good eating options. Plus, the tour guide should speak the languages and be able to assist with your dietary needs. The tapas bars are really fun! I have only run into trouble in the small, less populated areas of Northern Spain. We plan on visiting Seville later this fall...

I dont see any ingredients listed on the box of parchment paper! Before I use it again, does anyone know if it could possible contain a Gluten ingredient. I cant imagine it does but I am always suprised by the items that have hidden Gluten. Thanks, Theresa
