  1. Lately I've been into greek yogurt mixed with splenda, blueberries, and walnuts. Super easily portable. I also have been making big batches of soups and stews to take to work. I portion them into individual containers and freeze, then all I have to do is grab one from the freezer on my way to work each morning. I also like cottage cheese mixed with...
  2. Guar gum is great. It's also much cheaper than xanthan gum. I use about 50% more guar gum than the recipe calls for in xanthan gum.
  3. Lots of good tips above so I'm probably restating some of them. - Don't buy many pre-packaged, processed gluten-free foods. They're really expensive and usually not nutritionally sound or "worth it". You can make your own treats for much less and with better results. - Buy in bulk. Amazon is a good source. Sam's club and Costco are also good. ...
  4. I drink Starbucks (brewed, unflavored) coffee every single day without a problem. I'm interested to hear why they would suddenly say there might be CC problems when they have always maintained their coffee beans are gluten-free.
  5. (This is slightly off-topic, but...) Often when I read threads similar to these (newly diagnosed person has trouble sticking to gluten-free diet), I'm amazed at all the responses that berate the OP for essentially "being stupid" about their health. 9 times out of 10, the OP knows what they are doing is compromising their long-term health. They're not...
  6. 3groovygirls, sorry to hear about your experience. What a nightmare! What brand of IUD did you have? I rescind my earlier statement about not having another Mirena put back in. I think the acne (which has been more under-control lately) is worth not having a period.
  7. Yes. I was so happy to find out I had Celiac that I cried. I had been searching for an answer for years and every time I thought I knew what it was, it wouldn't be it. I was so happy to have an answer and a way to make myself feel better.
  8. I often wonder if it is a chicken or egg thing. Did I make the Celiac worse by having an ED or did I develop an ED because it felt so good not to feel sick?
  9. I'd be interested to see how many of us have had (or have) an ED and whether it was/is pre- or post-Celiac. I have struggled with Anorexia in the past and am struggling with it again. For me, it came after the Celiac (although years before I knew it was Celiac) but having such a restrictive diet makes it hard not to fall into the mindset again. Anyone...
  10. Someone might have mentioned this already, but try eliminating corn. My corn intolerance showed up about a year after going gluten-free.
  11. Other people might be able to. I cannot.
  12. Perhaps I've been gluten-free for too long, but 290 calories for cake is really pretty reasonable. I can't recall ever seeing a slice of cake in my pre-gluten-free days that was less than that (unless it was clearly a reduced-calorie "diet" food).
  13. My Starbucks had it yesterday, but I waited til today to buy it because I knew there wasn't a shadow of a doubt that I would inhale it. I thought it was excellent. Possibly one of the best pre-made gluten-free treats I've ever had. $1.95 is a very reasonable price for it and I'm decently impressed with the nutritional profile as well. For 290 calories...
  14. I use Open Original Shared Link recipe (although I split the 2/3 c. sorghum flour into 1/3 c. brown rice and 1/3 c. sorghum) and spread it super thin. It's still not super low-calorie, but it IS good and you could halve the recipe to make a smaller pie and lower the calories further.
  15. Sounds like acid reflux, which is worse in the morning for most people anyhow. I take a Prilosec (actually, the generic Target version) in the morning and at night.
  16. One cheat day will probably be all that you need for the next few years or the rest of your life. I never feel tempted to cheat if I'm feeling good. The only time it is tempting is if I have been accidentally glutened.
  17. I'm an O and I thought the book was pretty spot-on.
  18. Patti, I'm so glad you'll be able to eat it! I hope that the comments on the blog weren't discouraging to Starbucks. Some of them seemed a little off-putting from Starbucks' point of view.
  19. I am beyond excited about this because of what it means for us as a community. I'm a little upset at the comments on the blog, though. I think the fact that Starbucks made an individually-wrapped, gluten-free, dairy-free, soy-free, corn-free dessert is pretty impressive. I understand that because it contains almonds and eggs, those with allergies to...
  20. Well my point was that they haven't quadrupled in calories - they haven't even doubled in calories. Not sure where the OP was getting the calorie information on the 7" round crusts because it isn't accurate. 123 calories per crust is way too good to believe.
  21. The last package I had of the round Kinnikinnick crusts had 280 calories per crust. I believe they came 4 or so crusts to a package and the serving size was for 8 servings in a package, which would be half of a crust. ETA: Sorry, the serving size is for 70 calories per 1 slice, 16 slices in a package, which would make each crust 280 calories. Nutrition...
  22. Are you referring to severe bloating? Yes, that can be a celiac symptom.
  23. Carbs don't satiate me for long, especially quick digesting ones like dried fruit, cereal, or crackers. The protein + fat combo is what works for me. Truthfully the only reason I eat carbs is because I like the way they taste. They do little for actually keeping me full.
  24. I don't bake much but when I do, I use them and think they work well. They also clean up really easily.
  25. Thank you everyone so much for the support. I really, really appreciate it. We don't have children so she was our baby. Spoiled beyond belief. But she was the best cat you could ask for.
