  1. I'm curious to see how many of you were diagnosed by a doctor after tests and how many of you figured it out on your own. I saw dozens of specialists over the past 2.5 years and not only did no one suggest it might be celiac, but I even had a doctor tell me there was no way I had it when I suggested the possibility! It's a gross understatement to...
  2. I am also the only celiac in the house. My husband is generally pretty supportive, but is not gluten-free. I have a designated gluten-free counter that gluten never touches. We don't eat meals together (we never have), so when he makes his food, he makes it on his own counters and cleans up pretty well afterwards. Occasionally he makes bread, but he has...
  3. Urusla, I'm so sorry to hear about the problems you're having with your family. Have you tried punishing your youngest daughters for not following your rules? Think of your rules of not eating at the computer as having the same importance as coming home before curfew - they mess up and privileges get taken away. Just a thought. You're amazing for dealing...
  4. Bully4You, your energy is probably very low because you are getting only trace amounts of carbs. Can you have potatoes? You might get bored with them, but they'll give you more energy. Also, I'm sure you're eating less calories due to your restricted diet. That too will make your energy levels go down. (Please note that I'm not criticizing your diet...
  5. Egg whites are my go-to breakfast. Add a smoothie of mixed berries (lots of fiber) and almond milk and I'm good to go.
  6. I get a good amount of fiber, both from fruits and vegetables and from fiber supplements. That's interesting to know that it can help move fats through. I used to take a supplement called Omega 3-6-9 from NOW foods. I had to split up the dosage in able to digest it more easily, but I had no problem with it. I should buy some more. I should clarify that...
  7. Perhaps I should have my gallbladder tested. It's likely I was tested when they tested me for practically everything BUT celiac over 2 years while telling me I just had IBS. I read up on the symptoms of gallbladder disease and a difficulty digesting fat is definitely one of them. Thanks!!!
  8. I don't eat the yolks because I have trouble digesting the fat. Fat seems to be just as hard for me to digest as dairy... and almost as hard as gluten, although it doesn't do permanent damage like gluten does. If I could only eat normal amounts of fat, I certainly wouldn't mind being Gluten-free Casein-free.
  9. Hi! I'm in Norman... maybe we all should find a time/place to meet!
  10. I believe in drinking a lot of water, getting a good amount of exercise (3-4 sessions of cardio a week, 2 sessions of weight lifting), eating at least 5 servings of vegetables and 5 servings of fruit per day and getting plenty of sleep. I am dairy and gluten free, but also, low-fat. My intestines cannot handle even moderate amounts of fat, so I have to...
  11. Hi Mandy, In some ways, I very much envy you. I suffer from horrible pain spasms and severe, severe stomach bloating when I get glutened. In my eyes, it would be wonderful to accidentally get glutened occasionally and not suffer any symptoms. But you also have it harder than some of us do. Like overweight people that are told by their doctors they...
  12. I'm glad someone likes Bob's Red Mill gluten-free mix. I think it's pretty nasty - the bean flavor is way too strong.
  13. From reading posts on here, it seems that most people have personal favorites that differ between the type of recipe they are cooking: certain ones that work well for cookies don't necessarily work well for pancakes and cake, etc. I've used Hagman's mix in pancakes (fantastic), english muffins (ok), and brownies (fantastic). It seems that the best way...
  14. I might be beating a dead horse with this, but I have major problems if I eat things with too much fat in them. If you have a problem digesting fats, how much is too much will depend on your tolerance. As a general rule of thumb, I can eat no more than 25% of my calories from fat at any given meal (and thus, throughout the day). Any more at all makes me bloated...
  15. Thanks everyone! I guess we'll have to get a new one so my husband can continue to make his beloved bread. Tough, but that's life.
  16. Just like mentioning the word "wedding" is a bad idea when talking to florists and the like, "gluten-free" seems to be an automatic price mark-up. Thanks again!!!
  17. I would eliminate any form of milk in any product she eats. Here's a website that lists the names for all dairy derivatives: Open Original Shared Link Try to switch her over to Rice or Almond milk for cereal and stay away from the soy until her bloating goes down. When it does, you could try adding soy back and see if it causes a reaction.
  18. If you can handle casein (which, of course, is dairy), Rice Shreds makes good rice milk-based cheese. I can't handle dairy whatsoever, but the casein in this rice cheese doesn't seem to bother me.
  19. Whoever suggested going to an asian supermarket for rice flours for dirt cheap is an angel!
  20. My husband and I have a pretty nice bread machine that we used before I went gluten-free. If I bought a separate pan for gluten-free and made sure to have him clean the inside of the machine out with rubbing alcohol after he uses it, do you think it would be safe?
  21. In general, I try to stick to that diet. When I was first diagnosed, it was less than 2 months before my wedding and even a few days of being completely gluten-free made my horrible bloating better than it had been in a year. I was incredibly scared of trying new foods because I was afraid the bloating might come back and not disappear before the wedding...
  22. Nick, you sound like a wonderful friend. I was very excited about GlutenGuard when I got it. I still use it when I need to buy a product, like a can of black beans, and need to find a couple brands that are guaranteed gluten-free. I just search for "black beans" and scroll down the list till I find a couple brands that are gluten-free. For that...
  23. Someone might have mentioned this already, so if they have, I apologize. The diarrhea from the wine may not be an intolerance to something in the wine. Diarrhea is simply the result of your intestines speeding up the rate at which they contract. Constipation is caused by slow-contracting intestines. Alcohol is a stimulant for your intestines, which...
  24. I eat Open Original Shared Link. I don't eat much soy, but this is one case where I make an exception. It's very, very low in fat and calories and tastes amazing. I think their "Swiss Dark Chocolate" flavor is the best tasting chocolate ice cream I've tried in a long time.
  25. There is an Asian district in Oklahoma City called "Little Saigon" - I googled it and found 3 Asian grocery stores that look promising. I'll make the trek up there on Wednesday and see what I can find. Thanks!!!
