Other grains - teff, sorghum, millet, quinoa all much heathier than rice anyway. DQ2s can have a separate reaction to the oat protein, presents like gkuten symptoms. DQ2 Celiac children should not consume oats of ant kind. There are pubmed abstracts on these studies. And yes consumption of the food needs to have been taking place for the antibody... -

Just wondering if anyone had done a recipe with Millet, quinoa, or Sorghum for the major dry ingredient. I don't like to use rice or a lot of starches since they really reak havoc on the glycemic index. My little guy needs high protein to function as well -- no protein = very cranky, yelling, screaming, fit throwing, punching, angry little boy. -

Just a note about Sour Dough -- you need a natural sour dough starter for real sour dough with no commercial yeast. This takes a few days to make. Nourishing Traditions has a recipe in it for Millet bread, I think. It uses Lacto-fermenation using the whey from diary to begin the starter. My ds2 was 2 of the 5 positive plus IGA deficient which is why the other test were false negative. As I stated elsewhere the only positive dx as far as the Pedi GI is concerned is a postivie biopsy which at this point we are not doing b/c we went gluten-free immediately after the blood was drawn and we like what we see. Periactin is an antihistimine that is prescribed to have an appetite. In the prescribing information it states can be used for anorexia. Our pediatrician prescribed it after I found out about it from another Celiac mom. It does give my little boy an appetite after about 3 days. I have to go with give the gluten-free diet a try and see how she feels, give it at least 3 months for a full effect. At least she is old enough to tell you. If she is sensitive to casein, then yes dairy needs to be eliminated to see improvements. You can check out www.gfcfdiet.com for help in that area. As for results -- it depends on the symptoms. Very interesting. I don't doubt the glue and gluten issue. I have never liked the feel of the last 2 towels on a roll they make my hands sticky!!! We use Bounty b/c we can get them at Costco and they are better than the Costco PT. I've been using more PT to clean off counters b/c I didn't want to cross contaminate with a dish rag, you know wipe up a sandwich...
