  1. i usually just leave the whipped cream out of recipes, but kinda sounds like you need it for this recipe. personally i've beat up some egg whites with sugar & cream of tartar and make a merangue <sp> and try that. i'll look for peeps when i go shopping and try this recipe if i can find any, keep ya posted. --matt

  5. if you brought along an ice pack you could probably get vegan cheese to stay cool enough to last for a day or two, also cream cheese spreads. you could make grilled cheese over the fire! (tofutti best for this) how about fruit in a can, that would make a good snack. every vegetable i know of is available in a can, so bring those, you could even heat them...
  6. i don't add salt to anything, and i don't think my food tastes bland as was mentioned earlier, just cook without any salt for awhile, taste buds will adjust, and you'll actually be able to taste the food you're eating...and it will be GOOD! & maybe your hubby needs to learn how to cook, he may discover a hidden talent --matt

  9. i'm curious why you require something soy free? galaxy nutritional foods makes a good vegan parmesan, and tofutti makes GREAT vegan american cheese slices. unfortunatly both contain soy. also, do you want to give up dairy, or just lactose? i'm lactose intolorent, but can handle eating milk proteins, like calcium caseinate for example. oh, NU-TOFO...
  10. i just use leftover meat from roasts for sandwiches, then you know what's in 'em! then you won't get all the salt that comes in those deli meats either --matt

  13. just be happy with the knowledge that you're eating good & healthy, and that your arteries won't be clogged from all that pizza fat at an early age! pizza is horrible for you, let all those calories and fat go on someone else's ass --matt

  15. wow i just drank a can off strongbow, and really liked it!! anyone know how many calories are in one of these? sure hope it's gluten-free, no list of ingrediants on the side of the can --matt
  16. i was underweight and in my experience it's just a matter of calories. i burn 2300 calories per day just to live, so i eat around 2500 per day to maintain my weight. if i want to gain, need to eat more calories! as was mentioned, i wouldn't really recommend veggies/fruits, as they fill you up, yet are low in calories. can't get more calories in you...
  17. predisone is not the evil drug it's being made out to be. YES, it can have some side effects, but those are outweighed by the benefits the drug provides. as for weight, i haven't been on pred in about 10 years, but now i have been on it for the last 5 months, in very high doses. (up to 120mg/day at some points) 10yrs ago i gained about 70lbs, this time...

  20. i have a bunch of liquid egg product here about to expire. can i use it in place of regular whole eggs? if so how much liquid egg would be comparable to one whole large egg? thanks --matt
  21. call me old fashioned, but i use cookbooks all the time. my recommends: 1) the essential seafood cookbook 2) wheat free, gluten free cookbook for kids and busy adults 3) the gluten free gourmet makes dessert 4) the gluten free gourmet cooks comfort foods books i bought, but wouldn't recommend: 1) the gluten, wheat & dairy free cookbook...
  22. I have a receipe here that calls for a roast to roast in beer, and of course there is no gluten-free beer available in my area. does anyone know what i could use as a substitute? --matt
  23. i use elpeto pancake mix for my waffles, it's great. btw, for any waffles/pancakes, substitute the oil, 1 to 1, with applesauce if you want to cut out some calories and fat. cooking time willl lengthen a bit, and if you're using a waffle maker be sure to spray the surface with some cooking oil before making the waffle. i cut out 17g of fat and 100 calories...
  24. how about some escargot? it's gluten free, can be made dairy free, is super cheap, but looks fancy! just show up 30mins before you're supposed to to make it. there are a ton of receipe's over at cooks.com. you could also bring some corn chips & a bought/homemade salsa, possibly cover with cheese? --matt
