Dawn, I have some agar agar that I use in bread instead of gelatin. Haven't tried it in the cheese but I don't see why it wouldn't work. I actually haven't made the cheese to set up for quite awhile as I've been using it with the other cheese sauce to make mac and cheese. I'm referring to Rachel and Carla's posts about men being friends. I think it would be very difficult for a man to remain friends with a woman over the long haul. I hear you about the cost. I've put everything on credit card, even though I don't like to do that. I wanted answers, we'll be able to pay it off in the next year, barring any other unplanned things. I still have to test my youngest but he's only 10 months. -

Rachel, That's great news about not having Lyme. One more thing off the list. Mercury toxicity here we come. At least testing and more than likely treatment. I'm glad you were referred to a doctor that was willing to start to try and get some answers for you. -

Is she willing at all to consider testing for this? I know you've mentioned the kids aren't really interested in looking into it. Does this include her? She really needs to start looking at everything, and celiac is part of that. -

As far as store bought bread my family has liked enjoy life sandwich bread, and food for life breads (not ezekiel), their rice breads...they also have a millet bread. I make homemade bread from Annalise Roberts gluten-free Baking Classics cookbook. It does use dairy and eggs in the cookbook. I just sub the dairy. I can eat eggs so I don't have to worry... -

Kathy Ann, It could be gluten that is contributing to the problem. If she is only eating one meal a day, that is contributing a lot! Her body is going into starvation mode and will not let go of those pounds. Would she just consider the basic test with enterolab for $99. That is just the gluten sensitivity test. Are you still on dairy? Dairy (cheese) could be causing you problems as well. If you can, I would suggest going off of it for six months and giving yourself a chance to heal. As far as the diet, I too have found it more expensive only because I was a vegan before hand and lived off of gluten and soy. Your basic meats, veggies and fruits need to be a... -

Heather, I haven't been through this, but from what I've read the full celiac blood panel should tell you (if the numbers are high enough in your blood) whether you have celiac or not. The biopsy can rule it in, but can't rule it out as they could miss a spot that is damaged or you may not have much damage yet. DQ2 is a celiac gene. -

As far as I know Enterolab has the most genes that they look for, but I could be wrong on that. I would think you'd be able to order the gene test all by itself from them. Enterolab tests for the "main" celiac genes as well as the gluten sensitive genes. Open Original Shared Link -

Alice, Everyone has given such good advice already. I wanted to add that you could go through enterolab with a stool sample instead of undergoing a biopsy if you don't want to go through that again. Definately get the blood panel. Enterolab isn't accepted by a lot of doctors yet and if your bloodwork is positive you really wouldn't need to pursue...
