  1. It was my son with the broken bone . . . and it didn't come all that easily - he had to take a really agressive nose dive from the monkey bars to earn that one! Was merely pointing out that he can conveniently maneuver a spoon full of ice cream to his mouth with casted arm but of course can not grip a pen or pencil - I'm thinking he is milking it just...
  2. Hi! I had wondered for some time if there is a connection between Celiac and LD but have had trouble convincing others (mainly teachers). My daughter was diagnosed in kindergarten. Her reading rapidly disintegrated. About 6 months after diagnosis we noticed that she could not read a little beginner book that she had pretty easily read a year before. What...
  3. Hi All, I concocted a new bread recipe yesterday and thought some of you might enjoy it. Tremendously flavorful and moist. We ate the whole loaf in a matter of hours! Sorry to those of you who can't have dairy - it probably would not translate well into a non-dairy recipe since it is based on an old favorit of min - buttermilk white bread. Here it...
  4. Hmmm, I'm not sure how to describe it . . . a muffin top pan was designed to bake just the muffin top (I've also heard the term used to describe the part of a person that hangs over jeans that are too tight - lol). Anyway, it is kind of like a cookie sheet with big round, but shallow indents in them. Does that make any sense? Ahh - better yet - here is...
  5. Yeah!!! I am so excited to see so many people out there making these treats. I haven't been on the board for a while - too busy eating doooooo-nutttts. We have a glass cook top - no problems, just be carefule because the pan is heavy and could break your glass if dropped and could scratch if dragged - just handle it carefully. Isn't this thing just...
  6. I made really awesome hamburger buns recently. I used the Best Ever Flax Meal Bread recipe that has been floating around on this forum. Then I used a large scoop (like an ice cream scoop with a spring release) to get a good uniform size bun. I cooked them on a muffin top pan wihich mad a perfect shape. Then I sprinkled a few sesame seeds on top before cooking...
  7. Hi! We're big fans of the Pamela's Choc. cake mix too. But, I've also heard really good reviews on Namaste choc. cake mix. As for treats at school a couple that we really like are: Ice cream, popsicles or Pamela's Chocolate Chocolate Chunk Cookies (in a package). Or, I was going to suggest fruit, but I guess it's not packaged? barb
  8. Ok - so I saw this thing on TV - you know those things that you just gotta have and always cost $19.99. Well, I resisted it but then it showed up at Linens 'n Things. It was just begging to come home with me. But seriously, check this out!! Open Original Shared Link Totally cool! I just whipped up a batch of Pamela's Pancake mix. And I squirted raspberry...
  9. Hi! Not only is Chebe totally delish, it is also very versitile - you can do like a thousand things with it! (would probably even be good for fixing broken plumbing). Seriously, check out the chebe website and look under recipes Open Original Shared Link We've made "pigs in a blanket", Indian Naan, tortilla, just to name a few in addition to the regular...
  10. Hi All! I haven't been on in a while as I have been busy baking and writing PR materials. The idea is being unbelievably well met and local cafes can not wait to get their hands on the goods! In fact we are already serving some demo stuff (bread and cookies) at one shop and we're not advertising or anything but word has gotten out and people are coming...
  11. Hi! Realtor here!! Buying and selling a home is one of the most (or should I say 2 of the most) stressful things in life. I know this because I do it daily. Julie - I can't believe that your Realtor left you in a situation where you do not have somewhere to go. Normally I would want to make a deal contingent on the seller finding suitable housing. You...
  12. Excellent question . . . next time I open a bag of Chebe I will measure it and let you know. Looks like the only ingredients are tapioca flour, tapioca starch (didn't know there was a difference) and salt. I would think you could just use tapioca flour. I thought I once read a recipe for making your own chebe mix, but couldn't find it. I am going to experiment...
  13. Hi! Oh how my family has missed Indian food and especially garlic naan. So last night I was throwing together some Indian simmer sauce and chick peas and paneer and I thought to myself - I can do this!! And, I have been thinking about it for a while so I have seen that the common compnent of naan is yogurt so this is what I did: 1 package of original...
  14. There is a restaurant called Butternuts which is on Rte. 9 in Hadley, MA. It is a really nice upscale place and the executive chef, Andy Sussman has made it his business to learn all that he can about gluten-free cooking. He has had a few items on the menu that are gluten-free for a while but has now added gluten-free pasta so that if someone wants to order...
  15. Awesome!!! You guys are the best! I will run the list by my boss (7 year old Celiac daughter, that is). Thanks a ton!! We are in Western MA about 2 hours west of Boston and about 1 hour east of the Berkshires. The beautiful Pioneer Valley. Our biggest industry is 5 Colleges/Universities and lots and lots and lots of food. There has to be a silver...
  16. Hi All! I am very excited . . . gluten-free food is catching on like wild fire in the little valley where I live. There are a couple of restaurants (little places, not chains) that have gluten-free items, an ice cream parlor that offers gluten-free cones and special containers of ice cream that have not been contaminated. And, now a local market started...
  17. Hi! This recipe was floating around on a thread on this forum a while back. My family loves it (even the gluten eating ones). But when in a hurry we have started using chebe as well and it is just as good. In order to make it a little more like a wheat crust I add 2 Tablespoons of pamela's baking mix and about 2 tablespoons of flax meal (cuz I put it...
  18. Hi! I had started another thread in the recovery section addressing this same issue. My daughter is going on 1.5 years gluten-free now and her numbers have gone from 180+ to 80+ to 70+ to 60+ in six month increments. She is also diabetic so I got to wondering if there was something else effecting the tTG or if other auto immune issues could cause the number...
  19. Sandy, Thanks for your thoughtful and intelligent reply. It was most appreciated today after a tedious and non-productive visit to the endocrinologist this morning (no different than usual). First we had a fun conversation with a resident who tried to insist that Camryn could not be having a gluten reaction if she does not have diarhea (even though she has...
  20. My daughter was diagnosed with both type 1 diabetes and celiac about a year and a half ago. We have had the normal learning curve with going gluten-free ike everyone else but have eliminated 99.9999% of all possible sources from her diet. She is feeling well, growing and maintaining excellent blood sugar control. So, that's all good. . . diet is fine, doesn...
  21. Hey, great picture . . . making me hungry! Try 'em in chocolate next. We sliced them into round disks and made like little woopie pies by putting whipped cream between two disks. Yum! Very strange but delicious recipe! bj
  22. We use Josef's gluten-free Graham Crakers. They are very good. We can buy them at our Whole Foods Market but we have also gotten them on line. But even better yet, we have made home made graham crackers from a recipe in The Incredible Edible Gluten Free Food For Kids book. They came out great for both smores and everyday snacking. Also very good with peanut...
  23. Hi! I just made a batch of "sandwich wraps" that were easy and tastey. I do not have a tortilla press (although I would love to have one) so this is what I did: 1 package Chebe pizza mix (follow regular directions which include, eggs, oil, milk and optional cheese) I added: A bunch of parmesean cheese (maybe like 1/4 C.) 2T pamela's baking mix 2T...
  24. Gotta love generous family ! How about "since it is her birthday we are letting her pick the menu and she has chosen to have this kind of cake (and not Costco cake). So, since she's the birthday girls that's that." And, maybe with a little humor you could insert "we're lucky that was the extent of her request . . . much easier than say - a new laptop...
  25. Hi! We're in pretty much the same boat here. My picky eater in not the celiac and the celiac is also diabetic and vegetarian and extremely hungry and not picky! Oh what fun! The lists others have offered sound pretty much like the menu at our "mom's all night kitchen"! I have recently discovered that we all really like trying new stuff and trying to break...
