    I'm having a hard time believing this. To eat no carbs I think you'd have to subsist on animal products alone. Are there any societies, past or present, that never consume(d) plant products?

    :lol: We do more of the fishing with microarrays technique, followed by massive association stats. We follow SNPs more than genes, whenever possible. You can have a SNP associated with disease state, without having the nearby genes involved. Makes finding the gene kind of a pain.

    The genes they test for have not been shown to cause celiac disease, they only indicate an increased risk. If you are producing antibodies, then you have celiac disease regardless of what genes you carry.

    Your brain runs on chemicals. Gluten makes different chemicals happen. Your brain doesn't know what to do with those chemicals and it does what it thinks is best, which is make you nutsoid for a while.
