  4. I'm gonna back up Gemini here... I wouldn't eat somewhere with a "gluten free menu" because that seems to me a place that has a staff that follows directions and doesn't think. A higher scale place with staff trained to listen, or a local place that knows you can provide a perfectly safe meal. The wait staff at my favorite local Mexican place can rattle...

  9. I was just going to suggest this! I've had pasta salad made with zucchini "noodles", and I recently saw a recipe for lasagna using squash noodles.
  10. I've been trying to think of some analogous common food and the best I can come up with is iceberg lettuce. I find the concept of making "food" out of something indigestible, fascinating.

  22. All I can say is after four or five years of (soy free, dairy and corn light, nasty chemicals free) I still never quite know what to expect when I go potty. I've accepted that my body has it's own definition of digestion and I get what I get.....
  23. hmmm...I eat essentially no processed foods - they all make me ill. It has nothing to do with gluten (for me), but I think my body just hates all the chemicals. As for the good and the bad - I love my new awareness of what I put in my body, I hate how much time it takes to prepare every frickin' thing I eat.
