More Mexican Food!
Last night my son and I went over to my ex-aunt-in-law's house (how's that for a tenuous connection!) and we had fish tacos out on the patio with a fire in the fire pit. There are some things that are pretty cool about Arizona in February! I've been offered the job of English director and my second job as a tutor with a local tutoring company. That's really exciting. I told them that I'd probably take it in about a month, once my divorce is under control and I have energy to focus on allYou, Too?
Whenever people inquire about why I don't eat bread or why I'm eating what I'm eating, I give a generic response that I'm allergic to flour and it's hidden in everything---Just so people don't think I'm another FRUITY or NUTTY California Tree hugger and/or hypochondriac. But some people ask more about it and then I explain that it's not an anaphylactic allergy and that it's a genetic disease that is highly undiagnosed due to the wide range of symptoms and the ignorance of doctors who misdiagKfc
Kentucky Fried Chicken ( From: mmmom ) Just wanted to let everyone know that Kentucky Fried Chicken has changed many previously wheat free food to know being on the wheat list- please check their updated information at their website. My daughter found out the hard way after eating mashed potatoes and baked beans, itchy rash, insomnia, upset tummy, etc, etc.... mmmom is a member of the Members group and has 4 posts. A lot happens in a year In a year, I've gone from food ignaramous to foodie. Junk food eater, to food nut. I used to read labels on products to guage the fat and calorie content, but now it is more for the ingredients. Last week I found out that food labels contain the amounts of protein and carbohydrates in them My favourite reading went from bestsellers to food labels. Lol I've gone from unhealthy to getting better. I have found a new passion. Can you guess what? It has been quiteFebruary 01,2007
Another month gone by so quickly! I can hardly keep up. Traveling with food is going ok. I've been making some hot dishes since it's so cold. I made chili tonight and for some reason it was really flat tasting. I made it like I always do but it needed more umph tonight. I'm a little tired (already ) of coming home at 11:30 or midnight and having to clean the thermos and ice chest out. It makes the day seem extra long to have to do chores that late. I think Sunday or Monday, wheneverYogurt
The homemade yogurt came out great. Every one loves it. I added nutrisweet so that it wasn't so bitter. I also added gelatin so that it would be firm. My son, 1.5, just smacked his lips in joy! What a cutie! The divorce isn't going amicably. My soon to be x is crazy. He called the police (there are not cusody orders) because he say's I'm crazy and angry. Well, I'm certainly angry, but I'm not irrational. He wouldn't return my daughter to me last night and he broke our verbal agreement.January 29, 2007
What a busy weekend! I feel like resting today but it's another travel day. I need to get some traveling dinner ideas so I can pack a meal that ds will eat before rehearsals. He is not cooperating with a gluten-free diet so husband and I decided we need to totally clean out the house and all of us will be gluten-free. I was shocked by that! I don't know how long that will last to be honest. I suggested to ds that he get some lunch meats and cheeses, along with raw vegetables and packCheap gluten-free Dinner For Single Parents
Okay, so 85% of the time I like leftovers and easy-to-make dinners because of the whole working single parent thing. Tonight I out did myself with nachos. There's that Mexican food again. Yeah for Mexican food! So, I figure a bag of tortilla chips on a tray sprinkled with cheese under the broiler for 3 minutes is pretty easy. Then I dress it up with a can of microwaved refried beans and diced up roma tomato. It takes 10 minutes, start to finish if you don't already buy pre-shredded cheese.January 28,2007 Rant Warning
I'm on a couple of boards now that has bickering going on because of "celebrity spokepersons". I don't get it. Why do we need a celebrity to validate what we have? Does it make the disease any more real? No. Does it make it "ok" to have? no. It might make it the flavor of the month disease which we don't need. I truly don't get why people think it's such a grand thing to have a celebrity vocalize their disease. It doesn't change my life or my disease if celebrity 'X' has it. It doesn't mWhatta Day
Unfortunately for me I was ahead on a project at work and what does one of my teammates do? He tells the boss we'll be done a week early!-Meaning I had to work nonstop and late to finish it in time for Monday and so did the secretary. whatta jerk. THEN, I'm driving home and there's an ambulance, so I pull over. I'm looking in the rearview at the PT Cruiser behind me and she pulls over, too BUT THEN she hits my car! I think I'm ok, and there didn't appear to be damage, but I wrote the info.doJanuary 27, 2007
Today is a big day. Son has Shakespeare auditions and a talent contest tonight. I would be so nervous and he's goofing around like it's another average day....I guess for him it is. He's really into this entertainment field. I had a horrendous night Thursday night. I had the most massive RA pain that I've ever had in my two years of this disease. I'm not sure what triggered it but I'm suspecting a hamburger and diet Dr. Pepper. I haven't had red meat or carbonated beverages in a long tJanuary 23,2007
I found out the dizziness wasn't from being glutened. I KNEW I'd been extremely careful! It's from my RA medicine. That's one of the top side effects, that and diarrhea I'm feeling very good this morning, husband said I'm "buzzing". I feel that way when I'm completely gluten free. I have so much energy it's annoying! It's pretty sad when I start laundry at 7 in the morning. I hate doing laundry. I had to have something to do though. I'm sure it will hit me around 10 am and I'll nTofu Yum-e
I got FAT over Xmas! Two weeks in IL with Gramma and MOM cooking "special" for me and mom& her bf taking me out to eat (they'd go twice a day, not me- once a day was my eat-out limit!) But, I felt like I had to eat the desserts my gram made--a little each day, since nobody else ate any "special" food. 9 lbs later, my clothes are tight! But now I've lost 4 of the pounds already. Just being back to my normal routine and workouts. But having a big fat bust is kinda fun! Every time I look dJanuary 21, 2007
son got his call today, not only did he get a part in the play, he got 3 parts! Tomorrow we start "the drive". We got around 7 inches of snow today. It's one of the prettier snows we've had in years. It's not dreadfully cold either, it's one of those snows that you want to go out and walk in it. I must have been glutened cuz I've been having those weird dizzy spells in the top of my head today. I used to get those quite a bit before gluten-free. I don't know where on earth I wouRancho Preparado Marinade
DH had the kids on Friday night so I went over to a friend's house for Mexican food and drinks. The woman preparing the food was so funny. She knew I was allergic to wheat and everytime she used the corntilla (made-up word) fork on the flour tortillas she'd swear at herself and throw the fork into the sink. She went through at least 10 forks! They went to the Ranch Market to pick up the food. Ranch Market is a cultural experience if you ever make it to the metro-Phoenix area. EverythingPot Roast...
The office had pizza for lunch today and what did I have? Pot roast....grumble mumble. I gave the rest of the leftovers to the cat.January 17, 2007
Well, we're gearing up for a busy spring. Son just got a call-back from the theater. He'll be in at least two if not three big productions this spring. This means about 150-160 miles driven every single day from now until late April. I'm doing well with my diet but I'm a little under the weather. I don't have the stuff everyone else is fighting but I do have a sinus infection. It's mostly bothersome because it's settled in my ears and my hearing is off a bit. I'm taking z-pack for aI Shot The Sheriff!

Here's one: I don't date doctors, lawyers, self-employed, unemployed, salesmen, pilots, or law enforcement. But, I never say never, either. Upon my new 2005 freedom, I pledged to date one of everything. And. I. Did. So. Back 2 sheriff story. We were set up by his EX wife. Yeah, how d'ya like them apples? Good evening all, Today was a good day. We had professional development meetings all day and the boss took us out to lunch. It was at a sports bar. Lots of burgers, sanwiches, deep fried everything, etc. I had nachos. They were really good. They had real cheese on them and fresh salsa on the side. I couldn't ask for anything better. I was aprehensive about going out at first, but hey, I figured I could always just have a lemonade and eat when I got back to the office. What on earth wSchool Ugh (why Does Vacation Have To End)
So school starts on Tuesday. After a year and a month of hives I am finally hive free for 7 days! It is nice to feel pretty in my own skin again. Somedays I thought I looked like a big pink splotch and nothing else. But other than that, I am starting Spring Semester and I have a lot in store for me. Teaching swing dance again next week because I have my strength back. Yay muscles!!! I invited over my co-worker for dinner. She's a ball. I late 50s-something widower from New York via East Germany. I made Spanish tortilla with eggs and potatos, then served a green salad and mint tea. Just a simple dish but everyone seems to like it! Spanish tortilla: Slice 4 fist sized potatos into 1/4 inch pieces and fry in canola oil until tender Beat 6 eggs with a fork until well blended. Drain the potatos and them mash them into the blended eggs in a small bowl (just untThen I Go Wow!
Today started off bad, at 8 am the phone goes, and it is the hospital telling me that they have booked me in for a gastroscope next Thursday at 8am. I know I need it done, even if I have been gluten free for over a year, just think it took a year for the appointment to come through. The doctor said it would take a while and that by the time I got it done I could've healed, and that it was more to make sure that nothing else was wrong with me. So I will go and do it, but I am nervous, what if-

Yes, I have one of the older models and have tested many products with it. For me it seems like a valuable tool and I have used it to test foods that I eat regularly, which are naturally gluten-free, for example salsa, refried beans, etc.

Has anyone tried the NIMA gluten detector? I'm seriously thinking of investing in one. I haven't eaten out at a restaurant since my late diagnosis 4 years ago (I'm 55 in March) Any information would be greatly appreciated
