    Avocado and Tomatillo Soup (Gluten-Free)

    This version of a cold Mexican soup will refresh both your palate and your culinary repertoire. It makes great base, and holds up nicely to other flavors. Adding roasted chili or jalapeño peppers or cherry tomatoes gives it a surprising bite. For a more rustic texture, omit the blender altogether. Dice the tomatillos into small chunks, and work the avocados well with a wooden spoon or fork. This soup makes wonderful meal on a warm day.

    Ingredients:
    3 ripe avocados
    5 ripe tomatillos
    3 cups chicken stock
    3 tablespoons fresh cilantro, chopped
    2 gloves garlic, chopped
    1 ½ cups heavy cream
    2 teaspoons lemon juice
    Salt and pepper to taste

    Directions:
    Bring a pot of water to boil and cook tomatillos for five minutes, until tender. Roughly chop and add to a blender along with diced avocado and garlic. Add chicken stock and lemon juice. Blend until smooth. Work in batches depending on the size of your blender.

    Transfer to a bowl and fold in cream and cilantro. Season with salt and pepper to taste.

    Serve chilled.

    Cold soup has never been something that I make very often but the photo looks so yummy and I am a very big fan of avocados I will just have to give this soup a try.

    You could sub out the heavy cream by using a low fat milk and adding some butter. Or ?

    Or substitute low fat milk et al for heavy cream plus a little butter.

    Ingredients:
    One pound boneless, skinless chicken breasts cut in two to three pieces each.
    Two teaspoons (or more) taco seasoning mix
    Two thirds cup bottles salsa OR one can Ro Tel diced tomatoes with green chilies partially drained
    Two thirds cup shredded cheddar jack cheese
    One-four ounce can diced green chilies (can use less)
    Sour cream
    Sliced black olives
    Directions:
    Combine chicken and seasoning mix in bowl and toss. Heat skillet with cooking spray and cook chicken until browned. Arrange chicken in a dish coated with spray. Top with salsa or tomatoes, cheese and chilies. Bake at 450F for approximately eight minutes or until done.
    Top with sour cream and black olives.

    Ingredients:
    1 pound chopped turkey
    1 cup gluten-free bread crumbs OR cooked rice
    1 egg
    ½ chopped up cilantro
    1 small onion, chopped fine
    2 cloves chopped garlic
    ½ cup pine nuts, toasted if possible
    1 cup calvados or apple jack...or if you dont use liquor, apple cider
    1 small package of frozen peas
    ½ small package mixed frozen veggies
    salt and pepper to taste
    Directions:
    Mix together all ingredients except peas and calvados. Form small meat balls and brown in olive oil. Do in batches and then return to pan. Add calvados and peas, cover and cook a half hour. Serve over rice. If sauce is dry during cooking, add a little water or chicken stock. It should come up half-way to meatballs.

    Black beans are a healthy addition to any diet, and especially to a gluten-free diet. They are inexpensive and taste great.

    Serves 2
    Ingredients
    4 gluten-free tortillas
    1/2 cup Greek plain 2% yogurt
    1/2 cup pureed pumpkin 1/2 tsp. chili powder 1 cup white beans 1/4 cup fresh curly parsley, chopped 1 1/2 cups black beans, cooked 1 cup wild rice, cooked 1 ripe avocado, peeled, pitted and mashed 1 plum tomato, finely chopped 1/3 tsp. sea salt 1/4 tsp. freshly ground white pepper Directions

    Easy Ground Beef Tacos (Gluten-Free)
    As a kid, the first tacos I ever had were far from traditional Mexican style tacos. The were much closer to the style of tacos later made famous by chains like Taco Bell and others. They were made with ground beef, lettuce, cheese, and tomatoes. If your kids are partial to the fast food version, they will likely love these little gems.
    Ingredients:
    1 tablespoon vegetable oil ½ cup of water 1½ pounds lean ground beef 2 cups shredded lettuce 2 cups diced tomato 1½ cups shredded cheese ½ cup chopped onion (as desired) 3 tablespoons taco seasoning (see recipe below) 10-12 crispy corn tortilla shells Your favorite hot sauce or salsa, as desired.
