Just been diagnosed and joined. As there's no Introduction section,  thought I would do it here.

Some starting the gluten-free diet tips for the first 6 months:

Get tested before starting the gluten-free diet.
Get your vitamin/mineral levels tested also.
Don't eat in restaurants
Eat only whole foods not processed foods.
Eat only food you cook yourself, think simple foods, not gourmet meals.
Take probiotics.
Take gluten-free vitamins.
Take digestive enzymes.
Avoid dairy.
Avoid sugars and starchy foods.
Avoid alcohol.
Watch out for cross contamination.

Sorry for missing all the replies. I have no excuse other than didn't get the emails. 

 

GFinDC thank you for the advice. I'm a cancer survivor and been getting check ups since I beat it and that was over 4 years ago. The iron and Iodine levels in my blood were always a problem. It seems now we know why. Only narrowed it down to Celiac disease in the last month. Now getting Iron infusions and seeing the Gastronomy Specialist on Thursday.   

 

It seems I wasn't a great eater of wheat based foods like breads and cakes, except for biscuits and sauces. I can't drink Alcohol due to the radiation burning out my saliva glands. I do like yoghurt and similar foods. 

 

The dogs name is Rajah, 2.5 years old and he's lovely if a bit crazy. He looks tough, in truth a very friendly dog. He will bark on command or when he wants something like attention, loves ice cream, kids who play with him or feed him. Great with very little children, just stands and lets them do anything to him.

Yes, we have been aware that this can be an issue with mushrooms but as long as they are rinsed thoroughly it should not be a problem since the mushrooms don't actually incorporate the gluten into their cellular structure. For the same reason, one needs to be careful when buying aged cheeses and products containing yeast because of the fact that they are sometimes cultured on gluten-containing substrate.

      The one kind of food I had been buying and eating without any worry for hidden gluten were unprocessed veggies. Well, yesterday I discovered yet another pitfall: cultivated mushrooms. I tried some new ones, Shimeji to be precise (used in many asian soup and rice dishes). Later, at home, I was taking a closer look at the product: the mushrooms were growing from a visible layer of shredded cereals that had not been removed. After a quick web research I learned that these mushrooms are commonly cultivated on a cereal-based medium like wheat bran. I hope that info his helpful to someone.
