Glutened, Flu And Random Update

Well.. I have been quiet for a bit on the forum as of late because I came down with that nasty flu that seems to be getting people all over the country. I was down for nearly 2 weeks! Then we found out my boyfriend's grandma passed away after a heart attack on 1-4-14. Drove 7 hours (with frequent bathroom stops for me-- sheesh!) to go to her funeral. 

 

Went to work and foolishly ate 2 chocolate covered almonds from Trader Joe's that said gluten free on the packaging. Well of course after I started to have my typical symptoms of a glutening which is itchy scalp, the dreaded D, insomnia, headaches I went back in to work and reread the label. It says that lovely "processed in a facility with wheat" disclaimer. So I was an idiot. I need to practice the mantra  "Every label, the whole label, every time." So I dealt with that. Still resolving but much improved... scalp is taking a bit to heal up.

 

I'm working out at home with a squat rack and doing a 5x5 strength program. I'm still not doing cardio workouts. I am focusing on strength and attempting to build muscle.

 

I bought a new set of Circulon Symmetry pots n pans today. I had a nonstick set from my pre-Celiac life and I know they could be hiding gluten in the scratches. It was a cost issue but not I have  a new set so any cross contamination issues are gone. My house I think, is gluten free. At least my shower and kitchen are.

Sorry you had a tough month...don't be too hard on yourself for the old processed in a facility with wheat statement.....I (I mean Santa) accidentally put a humongous milk choc bar in my 20 year old celiac's Christmas stocking with the lovely shared facility statement  :blink: .... I think he kinda enjoyed catching me in a label reading mishap....what can I say ... it happens to all of us.

Oh man!! I know if I opened my stocking I would have gone from elation :D  to disappointment :o when I read that disclaimer! :P  I love chocolate so much. :wub: But I would have gotten over it, of course..and then bought a new one! Thanks for making me feel better... that is what I like about this board. We are so hard on ourselves and then we come here and people tell us to relax and move on. I appreciate that more than you know.

 

I am so excited for my new cookware!! :) I tested the nonstick claim by frying an egg with NOTHING in the pan - totally worked! Then I made a yellow curry chicken stir fry. YUM!

It all worked out as hubs ended up with the huge bar which made him happy and son ended up with a safe bar on the 26th and another the following week because Santa still felt bad ;)

Welcome back!  Sorry to hear about the rough month... several people in my office have come down with either a really nasty cold, or flu-like symptoms.  One of my employees just found out he has pneumonia.  I would have thought that it got cold enough this year to kill off most of the microscopic critters... (it was 9 degrees F when I left the house this morning).

I've been gluten-free for almost 4 months now and have really stepped up my workouts over the last 2 - 3 weeks - it really feels good.  I felt fine before, but now I notice a difference in my overall strength and endurance.  It's amazing how much getting gluten cooties out of your body really does for you... and I was asymptomatic prior to diagnosis so I wasn't really expecting much.

 

Give yourself a little more time to heal... you'll be back to doing cardio in no time!  :)

Ugh, I had the flu (fever for five days) at the beginning of the month. Lots of fatigue too for two weeks afterwards. Than hubby shared an intestinal virus (was not food poisoning) and I was out for another five days. My daughter had the flu too. She was at the docs for a well check and saw a notice about the flu and how it can affect you cognitively for weeks afterwards. She got a C on a math test taken within a week of the flu (normal grade a+) and she told me that she was relieved to know that the flu probably impacted her. She is a perfectionist. I do not know where she gets that trait!

New pans! It's so sad how much I like good cookware... Hopefully they will help with the CC. How's the muscle coming along? 

 

I do not think it is sad!! It is exciting!! People that love to cook understand completely. I really have high hopes for eliminating the CC issue. I have not resolved my D yet and I think that may be why...

 

I am gaining, slowly but surely. It is really hard to bulk, being a girl and all. Figure conscious and all that. It is nearly impossible to gain just lean body mass without fat. So I know I'm gaining some fat with the muscle but I can hopefully shred it during my cut.

 I am telling you this flu thing is all over! It is nasty nasty! I guess the bacteria are driven from the cold to hide in the warm bodies and incubate there. So unfair!!

I'm glad you have been able to work out more! I am looking forward to how far I can push my body once I am feeling better.

Flu and GI issues = horrific time. I'm so sorry! And I can relate to you and your daughter... I am a little OCD myself. ;)

      In the U.S., most regular wheat breads are required to be enriched with certain B-vitamins and iron, but gluten-free breads are not required to be. Since many gluten-free products are not enriched, we usually encourage people with celiac disease to consider a multivitamin.  In the early 1900s, refined white flour replaced whole grains, and people began developing serious vitamin-deficiency diseases: Beriberi → caused by a lack of thiamin (vitamin B1) Pellagra → caused by a lack of niacin (vitamin B3) Anemia → linked to low iron and lack of folate By the 1930s–40s, these problems were common in the U.S., especially in poorer regions. Public-health officials responded by requiring wheat flour and the breads made from it to be “enriched” with thiamin, riboflavin, niacin, and iron. Folic acid was added later (1998) to prevent neural-tube birth defects. Why gluten-free bread isn’t required to be enriched? The U.S. enrichment standards were written specifically for wheat flour. Gluten-free breads use rice, tapioca, corn, sorghum, etc.—so they fall outside that rule—but they probably should be for the same reason wheat products are.

      Keep in mind that there are drawbacks to a formal diagnosis, for example more expensive life and private health insurance, as well as possibly needing to disclose it on job applications. Normally I am in favor of the formal diagnosis process, but if you've already figured out that you can't tolerate gluten and will likely stay gluten-free anyway, I wanted to at least mention the possible negative sides of having a formal diagnosis. While I understand wanting a formal diagnosis, it sounds like she will likely remain gluten-free either way, even if she should test negative for celiac disease (Approximately 10x more people have non-celiac gluten sensitivity than have celiac disease, but there isn’t yet a test for NCGS. If her symptoms go away on a gluten-free diet, it would likely signal NCGS).

      Thank you all so much for your advice and thoughts. We ended up having another scope and more bloodwork last week. All serological markers continue to increase, and the doc who did the scope said there villous atrophy visible on the scope — but we just got the biopsy pathology report back, and all it says is, “Duodenal mucosa with patchy increased intraepithelial lymphocytes, preserved villous architecture, and patchy foveolar metaplasia,” which we are told is still inconclusive…  We will have her go gluten free again anyway, but how soon would you all test again, if at all? How valuable is an official dx in a situation like this?

      Thanks for this Russ, and good to see that it is fortified. I spend too much time looking for M&S gluten-free Iced Spiced Buns to have ever noticed this! That's interesting, Scott.  Have manufacturers ever said why that should be the case?
