i just came up with a great quick recipe the other day.

i just had a day when i needed to use up everything in the fridge and cabinet

i had broccoli, onions and califlower in the fridge (although im sure you could use frozen)

i steamed those.

i made minute rice.

i put the rice and veggies is a frying pan for like 3-5 minutes with wheat-free tamari

while that was cooking up i opened up a can of peaches and a can of pears diced those .

then threw those in the frying pan for the last minute and added some almonds!!

yummm!!!

and really quick and super easy!!

let me know if anyone tries it!~

Hello pink...I'll give the recipe a try. Have to get some canned peaches or pears, though. Are you a vegetarian, as well? I find it very challenging to make gluten-free, veg. meals. I feel like we eat the same meals over and over!! :P

hi!! yes..i am vegetarian. i find being gluten free is very hard.

it has been exactly one year and im just now getting used to it.

i feel like i am always eating the same things.

i was so used to always eating the fake chicken breasts and nuggets and fake salami sandwiches.. all of that stuff. and now there is nothing.

i like franklin farms veggie burgers but thats the only meat substitute ive found.

i miss seitan sooooo much.

i feel like all i eat is tinkyada pasta.

ive actually gained 27 pounds this year after changing to a gluten free diet.

its hard for me to get used to cooking all of my meals.

let me know if you have any good ideas!!!

Hello,

I use my slow cooker alot, making veggie stews and chili. We also eat Thai rice noodle stirfries, yum!! We eat potatoes, rice and sweet potatoes. I like to fry them all together, my kids love it! We eat alot of meals with kidney beans(edta free, of course) On occasion, I do eat wild salmon, as my hubby is not a vegetarian and he cooks up seafood once in awhile. My oldest is a strict vegan, so it can get pretty difficult around here at meal times! :rolleyes:

I"M CONstantly searching the internet for new recipes My neighbour is a veggie as well, and she emails some recipes. Mostly ethnic recipes, mexican dishes,etc Another favorite is brown rice and cheese stuffed peppers! We buy gluten-free pizza crust and make our own pizzas, and bean tacos from corn tortillas. Tinkyada is the best,even my company loves it, when I make my famous Italian sauce with it!!

I have not gained weight while on the gluten-free diet, I work out most days.(more energy now) I lost 10 lbs. in one month during the beginning of figuring out my problem. So far, so good! I just feel better!

Hope my ideas helped. I'm sure you already eat alot of the things I mentioned.

hi!! thanks for the ideas. i got some pizza crusts and have been making really yummy pizzas. we have a great gluten free bakery here in vermont and they make awesome pizza crusts. almost more like a flat bread! ive been loading them up with spinach , garlic, tomatoes and cabot mozzerella! they are awesome!!!

ive used my slow cooker a few times.

i made some french onion soup.

ive made chili a few times with veggies and bobs red mill TVP.

that was realllllly good!

i find my hardest thing is having to prepare everything , but its getting easier every day!!

im going to attempt my first gluten free/vegan caked tomarrow for a friends birthday.

Hi, I am vegetarian too and miss the substitutes very much. I eat a ton of mexican food now. I was going to tell you that Lightlife makes a vegetarian hotdog that are called TOfu Pups! THey are good. My son eats them cut up. It says on their site that they don't contain gluten. I have never been able to talk to them about cross contamination issues, but my son and I don't get gluten symptoms from eating them and it says SOY on there package as an allergy and not wheat. THought you might want to try them.

I think this diet is very hard being vegetarian. It has been 7 months and I really would like to eat a normal meal some days.

i was going to tell you about the cake i made last night.

we had a friend over for his birthday who is vegan and i wanted to make a cake that was gluten free too.

so i got the "gluten free pantry" spice cake mix, added 1 cup applesauce, 1/3 oil, 1 jar carrot babyfood and shredded up some carrots in it!! no eggs and no milk!!!! and then only cooked it for like 20 minutes instead of the 35 recomended.

it was AMAZING!!!! so moist and so yummy

and then pilsbury cream cheese frosting is actually vegan and gluten free

so i frosted it with that and threw some walnuts on top!

needless to say there were no leftovers!!!

i just thought iid let you know incase you guys ever needed a cake evryone could share!!

i had some the other day with my pasta!

they were great!!

and i made a "meatball" sandwich with sauce and mozzerella!!

Hi Pink,

How did your vegan cake turn out? I have yet to bake a gluten-free cake. I've bought some great vegan/gluten-free pies at a bakery here in Calgary. My latest veg/gluten-free dish is Thai kitchen noodles with lots of veggies. The whole family loves it.

I will have to look for the Franklin Farms products. Anything my son and I can eat like that would be great. Now if they would just make a sandwich "meat".

hey monica!!

you'll definetly have to try the franklin farms things.

they are fresh , not frozen and usually in the produce department.

the veggieburgers ( original, chili-bean, and portabella) are all gluten free

and the meatballs!

i know, i miss sandwich "meats" too!!!

and a good "chicken" breast!

oh well.

hopefully soon they will have something!

oooh! i do have a really good recipe for "chicken"salad!

take tempeh and cook that in the micro with veggie stock for till its softer

mix up veganaise (or mayo)

wheat free tamari

celery

onions

salt/pepper

and whatever else you like.

sometimes i put in pickles too!! :o)

and then cut the tempeh into little chunks!! its really good!!

charlene you should try it too!!

ive been making the thai kitchen things too!

they are really good and cheap!!!

i even made spring rolls!

this is getting better all the time!

Wow, thanks for the recipe ideas. The cake sounds incredible! I wrote down the recipe. :) The "chicken" salad looks very good as well. I'll give it a try next week! Thanks so much for the great ideas. It's always great getting ideas form someone, so it's not the same ol thing night after night. lol I'll let you know how my faux chicken turned out! Take care. Oh, where do you find the faux gluten-free meat(slices, burgers), I haven't come across any.

hey charlene!

so i just realized ( a month later..heehehe) that you asked about the fake burgers.

well i get franklin farms stuff and its not frozen , its usually by the produce like by the mushrooms.

and they are sooo tasty . all 3 kinds of burger and the meatballs and gluten-free and yummmy!!

i hope you can find them at a store by you!!

did you ever get a chance to make the cake?

i make it all the time now!!

all of our vegan friends went nuts for it!

we made really good cookies too.

i used the gluten-free pantry choc chip cookie mix

used the 4tbs of butter it calls for ( i used willow run vegan margarine)

and then 1 1/4 c applesuace

1/2 coconut

and some pecans and walnuts !!

wooooo!! they were good!!

timing them was hard .. i defnitly had to check them alot and let them set for a while before eating them !

hi guys! don't mean to butt in, but I'm also a vegetarian (not vegan and I will eat shellfish occassionally). any way we can get a separate section on this board for veggies?!

I was a veg before celiac and I don't get bored and don't feel like I eat the same thing over! I'm even pretty good at making one dinner (with 1 or 2 adjustments) for me & hubby, who isn't veg or gluten-free, but doesn't eat beans, tofu or cheese.

I make veggie stir frys, stew-meat for him, tofu for me, shrimp creole over rice, of course pasta many ways, meatless loaf for me-meat for him, sometimes I make breakfast for dinner (eggs or pancakes), chicken & rice dinner-ckn for him/tofu for me (I have recipe), burgers (meat him/veg me) and potato salad or coleslaw, hot dogs (meat him/veg me) & french fries, mushroom stroganoff over rice, soup and corn bread, mexican night-corn tortillas with refried beans for me/chicken fajitas for him, then on free 'for all nights' I make gluten-free eggplant parm for myself, or grilled cheese, or chili, or a gluten-free pizza etc. Breakfast and lunch aren't so bad either! Then I always have something in the freezer that I baked gluten-free for a treat! Hope my list helped you get creative in your own mind! There are 2 weeks of ideas here! Bon appetite!

oh, also, I haven't been to whole foods in a while, but I used to buy 'foney baloney' (forgot company name) as a sliced deli item for sandwiches. I too like franklin farms products.

I would gladly share recipes/ideas etc with anyone who feels they are in need!
