Some Yummy gluten-free Food

Recently I have tried a few new gluten-free processed foods that I thought I would share.  Yes, they are processed but if you eat a mostly whole foods diet, then it won't hurt to have some treats now and again.  ?

https://eatcaulipower.com/our-food    I tried the veggie pizza and have to say, it was not bad at all.  It was one of the best frozen pizza's I have found in 14 years gluten-free.  Love the cauliflower crust!  I like mine golden brown and not under cooked so I cook it longer than the box calls for. I also blast it under the broiler for a minute afterwards to make the cheese golden brown. If you don't have the time to make it yourself or have gluten-free kids, give this a try.

http://www.sammisstuff.com/our-products.html   Warning on these donut holes.....they are truly addicting.  I buy them occasionally because they are so good, you cannot tell the difference with the wheat versions.  I actually think they are better.  These are sold at Whole Foods but may not be available at all the stores.  I am in New England.

That's it for today's Junk Food gluten-free news!  ?

Will add into the list next quarter, personally, I have to use Califlour foods plant-based crust, much lower carb. They have a plain, Italian, and a really spicy jalapeno one. I sometimes like them soft, but other times extra bake them so they are like a thin crust pizza hut crsipy. I like to top with miyoko vegan mozz tiny bit of sauce and whatever toppings I am in the mood for. >.> I wonder if I should start selling my baked goods online despite it being illegal here.

What you’re describing is actually very common, and unfortunately the timing of the biopsy likely explains the confusion. Yes, it is absolutely possible for the small intestine to heal enough in three months on a strict gluten-free diet to produce a normal or near-normal biopsy, especially when damage was mild to begin with. In contrast, celiac antibodies can stay elevated for many months or even years after gluten removal, so persistently high antibody levels alongside the celiac genes and clear nutrient deficiencies strongly point to celiac disease, even if you don’t feel symptoms. Many people with celiac are asymptomatic but still develop iron and vitamin deficiencies and silent intestinal damage. The lack of immediate symptoms makes it harder emotionally, but it doesn’t mean gluten isn’t harming you. Most specialists would consider this a case of celiac disease with a false-negative biopsy due to early healing rather than “something else,” and staying consistently gluten-free is what protects you long-term—even when your body doesn’t protest right away.

Yes, I meant if you had celiac disease but went gluten-free before screening, your results would end up false-negative. As @trents mentioned, this can also happen when a total IGA test isn't done.

I found at Disney springs and Disney they have specialist that when told about dietary restrictions they come and talk to you ,explain cross contamination measures tsken and work with you on choices. Its the one place I dont worry once I've explained I have celiac disease.  Thier gluten free options are awesome.

Have you tried Pure Encapsulations supplements? This is a brand my doctor recommends for me. I have no issues with this brand.
