I want to make nachos surpreme for dinner this saturday night. I usually season ground beef with a packet of Taco seasoning, place over the nachos, top with cheese and melt away!! Then I will add salsa, & sour cream, my family loves it. I make this when we sit down to for a game night at the kitchen table. good picking food, just not sure if I can make it since my husb was diagnosed wit celiac disease.

Old el paso taco sauces in the JARS are also msg free. The packets contain msg which is evil.

I use the McCormick's taco seasoning packets (I think the less sodium, regular, and mild are all gluten free). I used them before I was diagnosed, too!

We do "nacho night" at our house too, and love it! Enjoy!

Most Ortega products are gluten-free, including the hard shells and seasonings.

I'm a fan of Spice Hunter's Fajita Seasoning for things like that.

I got a reply fro B&G a*Aug 31, 2005", they are the parent company of Ortega. They issue the following about Ortega( it says ORTEGA All Products, as it was in a big list of all the brands they sell)

ORTEGA All Products

Ortega has been following a strict labeling policy with regard to any allergens in our foods and incoming ingredients.

We have insisted that our suppliers notify us if gluten is used in any of their ingredients and yet is not declared on their labeling. Thus, we believe we have uncovered any potential use of gluten containing ingredients.

Therefore, any Ortega product is fully labeled for any presence of gluten or gluten containing ingredients.

I have been wondering about taco seasoning as well. I have a big container of McCormick (the kind you buy at Costco), but the ingredients label gets peeled off to reveal the instructions. So I don't even have ingredients to check. Is this the same as the packets? Has anyone else used this before? I don't want to waste it if I don't have to. It's half full!

I'd just call McCormick and ask them about the large container.

Be careful with McCormick Taco packets. Last I checked MILD and HOT are both gluten-free but not the MEDIUM. Why?... Who knows!!

You guys are all AMAZING! Thank you! I  was also wondering about the taco seasoning thing. It's so scary to be unsure about something because it's like playing Russian roulette with my health.

These comments are 10 years old.  I know ingredients of taco or chili seasoning packets have changed in that time.  PLEASE do not go by 10 year old info.  Read the ingredients.  They list wheat very clearly if they add a bit of wheat flour as a thickener.

I looked further into Thiamax Vitamin B1 by objective nutrients and read all the great reviews. I think I will give this a try. I noticed only possible side affect is possibly the first week so body adjusts. Life Extensions carries Benfotiamine with Thiamine and the mega one you mentioned. Not sure if both in one is better or seperate. some reviews state a laxative affect as side affect. SHould I take with my super B complex or just these 2 and multivitamin? I will do further research but I appreciate the wonderful explanation you provided on Thiamine.

There are other Celiac genes. HLA DQ 2 and HLA DQ 8 show up in people from Northern European descent.   People of Mediterranean descent have HLA DQ 7.  People of Asian descent have HLA DQ 9.   There's other Indigenous populations that have other HLA genes that code for Celiac disease.   Are you still having symptoms?   What do you include in your diet?  Are you vegetarian? Are you taking any prescription medication?  Omeprazole?  Metformin?   Do you have anemia?  Thyroid problems? Are you taking any vitamins or herbal supplements?

There are eight essential B vitamins.  They are all water soluble.  Any excess of B vitamins is easily excreted by the kidneys.   Thiamine is Vitamin B 1.  Thiamine is safe and nontoxic even in high doses.  Benfotiamine and TTFD are forms of Thiamine that the body can utilize very easily.   The form of Thiamine in the supplements you mentioned is Thiamine Mononitrate, a form that the body does not absorb well and does not utilize well.  Only about thirty percent of the amount on the label is actually absorbed in the small intestine.  Less than that can actually be used by the body.  Manufacturers add thiamine mononitrate to their products because it's cheap and shelf-stable.  Thiamine and other B vitamins break down when exposed to light and heat and over time.  Thiamine Mononitrate is a form that does not break down over time sitting on a shelf waiting for someone to buy them.  What makes Thiamine Mononitrate shelf stable makes it difficult for the body to turn into a useable form.  In fact, it takes more thiamine to turn it into a useable form.   Gastrointestinal Beriberi is a localized shortage of Thiamine in the gastrointestinal tract.  High carbohydrate meals can result in gastrointestinal symptoms of Gastric Beriberi.  Fiber is a type of carbohydrate.  So, high fiber/carbohydrate snacks could trigger Gastric Beriberi.   Since blood tests for Thiamine and other B vitamins are so inaccurate, the World Health Organization recommends trying Thiamine and looking for health improvement because it's safe and nontoxic.
