Hi everyone,

If you live in the DC or Baltimore area, do you know the story about One Dish Cuisine? After nine years with my dx of celiac disease, I was finally preparing for a weekend trip/pilgrimage there, but saw on a sidebar twitter feed on their web site, that it's closed. Does anyone know the full story?

We are proud to have been the first gluten and allergen friendly cafe, deli and bakery in the US and to have served you since 2010.  (Recognized as the most allergy-friendly restaurant in America several times, most recently in July 2019!)
This was not an easy decision for us to make but has become necessary due to Maureen's deteriorating health. It is our hope that someone will want to take over the company and continue to bring great tasting gluten and allergen free meals and desserts to the community. Thanks! Yes, I just saw this myself, and o sure, I'll go plunk down a check tomorrow! But actually it's been a dream of mine to open a gluten-free restaurant in DC and call it Gluten Free, so there'd be no question.

It's just strange because the rest of the web site is open. If it weren't for the sidebar twitter feed and the blog, you wouldn't know. I'm going to call tomorrow to see what the story is. I know that Maureen, at one time, not sure about now, cooked gluten-free meals for Childrens Hospital in DC.

I was so saddened to see the news (on FB, as y'all have mentioned). All things considered, I think they're the best gluten-free restaurant I've ever visited and I love the fact that the location is so close to the Baltimore airport (which happens to be a destination for Southwest).

I certainly hope someone continues the business and at least attempts to maintain their standards. Preferably the new owner would be someone who knows firsthand the challenges of eating gluten free.

A week or so ago, I called and spoke to someone who indicated that they are (still) attempting to sell, but it will probably change locations. Meantime, they are continuing to sell their equipment, which I don't totally understand if they are selling the business.

      What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
