Alternative To Rice Flour

I'm pretty sure I'm intolerant to rice, but nearly all my gluten-free recipes have some rice flour in. I'm new to all this gluten-free baking, so was wondering can I just substitute any gluten-free flour for rice flour, or will that change the finished product? I'm particularly keen to find a non-rice way of making bread.

Susie--I seem to be in the same boat as you. I am increasingly sensitive to rice. I believe I proved that yesterday by having spanish rice for dinner, and chocolate cake--homemade using Ener-g rice flour mix. At 4 AM, I woke up nauseous. This morning, I'm very itchy and feel out of it. But back to your question about alternatives, I want to try and come up with a mix that is based on sorghum flour. I do well with the cookies from Enjoy Life--the ones that use the sorghum flour. The problem is, I can only find Bob's Red Mill and I don't want to use that brand because so many people here have reported problems with their stuff. I plan to use the sorghum flour and potato starch in a mixture, possibly with corn starch. Hopefully others who have a bit more experience with this will share it.

Hi there! I am intolerant to rice and have a lot of recipes on hand. Other than bread, what else are you interested in? :) I'll post a whole bunch for you, or pm me if you'd like.

Cheri--I was searching this afternoon, and found one right here! Go to Gluten Free Food at the left of the screen. Then to Baking Ingredients, and scroll down to Authentic Foods Sorghum Flour. Their ad says they're made in a facility dedicated to gluten-free--or some words to that effect. I will be ordering some. And wouldn't you know it, I just placed an order for some Enjoy Life stuff--only wish I'd seen this sooner!

These are great, but when I made them, I altered parts of it. (If you want to know which things, let me know. I am sure they are fantastic as is, too).

I have my own that I have made up, but they are in my recipe book which isn't in this room. I think I just got glutened or am having a weird reaction, ironically, so I don't really feel like getting up. Let me know though. :) Hope this helps for now.

      Thiamine interacts with all the other B vitamins.  Thiamine and B 6 make a very important enzyme together. With more thiamine and other vitamins available from the supplements your body is absorbing the ones you need more of.  The body can control which vitamins to absorb or not.  You're absorbing more and it's being transported through the blood.   It's common to have both a Thiamine and a Pyridoxine deficiency.  Keep taking the B Complex. This is why it's best to stop taking supplements for six to eight weeks before testing vitamin levels.

      Yes I took a supplement that had B6 in it, low dosage though. I've stopped taking that. B1 doesn't affect other B vitamin levels?
