Thank you for looking into this. I was just diagnosed in March and am very sensitive. I am really having a hard time!!

While this canned chicken may not have gluten ingredients, it does contain additional items that you may not be able to digest well.  Keep a food and symptom journal to help you identify additional food intolerances that can cause discomfort, but do not trigger celiac disease (autoimmune response that damages the small intestine).  It is easier, in the beginning, to avoid processed foods as much as possible until you have mastered the gluten-free diet and are feeling better.  This includes eating out.

I have no problem with Swanson's chicken or chicken broth. However, I have been gluten free for about 15 years, so I have an advantage . My gut has had time to heal. You may well find that foods you cannot eat now will later on be fine.

      Thiamine interacts with all the other B vitamins.  Thiamine and B 6 make a very important enzyme together. With more thiamine and other vitamins available from the supplements your body is absorbing the ones you need more of.  The body can control which vitamins to absorb or not.  You're absorbing more and it's being transported through the blood.   It's common to have both a Thiamine and a Pyridoxine deficiency.  Keep taking the B Complex. This is why it's best to stop taking supplements for six to eight weeks before testing vitamin levels.

      Yes I took a supplement that had B6 in it, low dosage though. I've stopped taking that. B1 doesn't affect other B vitamin levels?
