Loose stools after 2 months of gluten free diet

My 16 year old has been gluten-free for 2 months, has gained back 3/4 of the weight she lost and looks so much healthier. She says she has no more rumbling or stomach grumbling, she had a light spotty period after not having any for 8 months and is acting like her old self, again. Only thing concerning to me is her stools have become looser, not diarrhea, only once a day, but they seem broken down… Is thus a detox happening? Her regular pediatrician thinks it is just her eating different foods, more fruits and vegetables than before which have fiber which she did not eat much of before going gluten-free. Should I be worrying? I hate to take away other food groups so soon… I know this will not cause further harm to her small intestine , but will it slow healing?

2 months is nothing..  come back after a year.

It's always good to re-examine her diet just to be sure that she's not getting any hidden gluten, for example does she eat out at restaurants? This is a common source of contamination. Also, is she getting enough fiber and starches in her diet? Too like of either can cause this issue.

I have not made my own juices but have made my own granola copycat recipe from Trader Joes Turmeric ginger granola. Have you made your own juices? blending vs cold pressed what is better?

Sadly, I just now see the extremely tiny and hard to read wording on the label from some I got from nuts.com last year and it's below the certified gluten free sign which is more obvious. Another concern is that there's no expiration date to be found on any of the packages I have gotten.. It's confusing because they claim these are certified gluten free which Is why I got them due to having celiac. Looks like Tierra Farm has the lesser of the allergens, specifically wheat, so I will have to give them a try. Thanks

After many years of running Celiac.com, one thing I've noticed is that I rarely hear about support groups that organize gluten-free picnics. It seem like this would be a great way to get celiacs together. I've attended various conferences, meetings, and events over the years, but strangely, no gluten-free picnics.
