I’ve been having issues for quite a while with being so bloated that it can make it difficult to take a full breath. Has anyone else experienced this? If so, what were some ways you alleviated it?

Have you been diagnosed with either celiac disease or NCGS (Non Celiac Gluten Sensitivity)? If the answer is yes to either, are you practicing a gluten free diet in a committed way?

I experienced "sailors asthma" and edema before diagnosis.  

Sailors asthma happens when you don't have enough thiamine Vitamin B1.  

Retaining water, especially edema (swelling) of the ankles and legs is another symptom of thiamine insufficiency.  

If you've been eating a high carbohydrate diet, you may not be getting enough thiamine.  The more carbohydrates you eat, the more thiamine you need.   

Supplementing with Thiamine Hydrochloride (not thiamine mononitrate) may relieve these symptoms. 

I took thiamine hydrochloride and felt better quickly.  The World Health Organization says to give thiamine and see if there's improvement because thiamine is nontoxic and safe in high doses.  Take 500-2000 mg a day.  Experiment with your dose. Everybody's different.  Some people need higher doses to feel better.

Bloating can be common in untreated celiac disease and/or other food intolerances. If you're already gluten-free and having this issue double check your diet to make sure it is 100% gluten-free, and if so, keep a food diary and try eliminating dairy/casein, and other food types to see if you can figure out the cause. I have found I got something a bit this when on iron pills.   I found that they caused bloating.  I drank peppermint tea, which helped bring up the trapped wind through belching - not a nice subject, but it seemed to work!

You might try taking some BetaineHCL capsules aka Powdered stomach acid (always with tea or a glass or two of water).......water drives the process of digestion.

It sounds like you have many of the same symptom's as low stomach acid.

You can use the baking soda home test to see if this is happening to you......and it is going misdiagnosed/undiagnosed instead.

I would also suggest this blog post I read that summarizes a lot more of these connections between NCGS and/or Celiac disease and either Low and/or NO Stomach acid.

I can't tell you it will will help you the way it did me......only that it helped me and that it is worth doing more research on it......and I have given you good resources to research the topic of Low/NO stomach acid more for yourself.

      Thank you all so much for your advice and thoughts. We ended up having another scope and more bloodwork last week. All serological markers continue to increase, and the doc who did the scope said there villous atrophy visible on the scope — but we just got the biopsy pathology report back, and all it says is, “Duodenal mucosa with patchy increased intraepithelial lymphocytes, preserved villous architecture, and patchy foveolar metaplasia,” which we are told is still inconclusive…  We will have her go gluten free again anyway, but how soon would you all test again, if at all? How valuable is an official dx in a situation like this?

      Thanks for this Russ, and good to see that it is fortified. I spend too much time looking for M&S gluten-free Iced Spiced Buns to have ever noticed this! That's interesting, Scott.  Have manufacturers ever said why that should be the case?

      In the USA only wheat-based breads are fortified with certain vitamins, but not gluten-free breads, thus we typically encourage celiacs to take multivitamin supplements.
