Does anyone react to Pamela's Baking Pancake mix? I think that cookies and quick bread made from that make me feel worse than when I eat gluten. Any ideas what might cause that? Will be looking for another baking mix.!

I used to eat their pancake (mix) a lot, but no longer do. I had no reaction when I did.

Maybe you're reacting to one of the ingredients / additives - like xanum gum, maybe?

Welcome to the forum, deirdre!

Can you list the ingredients from the packaging for us? It is typical for celiacs/NCGS people to develop food reactions in addition to gluten.

I doubt there is any gluten in their products, however, if an ingredient does not agree with you this company makes an excellent pancake mix (they are also a sponsor here):

I use Bob's Red Mills without any problems!!   I also use other products of his too!

This article has some detailed information on how to be 100% gluten-free, so it may be helpful (be sure to also read the comments section.):

Wheat flour is fortified with vitamins in the U.S. as a part of USDA policy. Gluten free facsimile products are not fortified. There is no government mandate for such. When you remove wheat flour by going gluten free, you may be removing a significant source of vitamins.

Okay.  That doesn't answer the question, but thanks anyway.
