Julie, Your cookies sound delicious! I've been making grain free chocolate chip cookies at least once a week :D I buy one bag for baking, and another one for snacking :lol:

Hi Patti :) I got the recipe from the baking section, very easy and so few ingredients- you could even throw in your chocolate chips if you wanted :lol: . I know you can't have PB, but a couple of people said they used almond butter, cashew butter, etc. and they tasted just as good.

I am going to try them with other nut butters soon.

What is your cookie recipe? If you don't mind sharing....

Boy, I had to reboot my computer twice. It was going schitzoid on me.

Now that I missed the party. :(

I'll change my avatar to what I love (food wise that is). You all know, I've mentioned it thousands of time......enjoy life chocolate chips since I am soy intolerant I don't have anything with soy lecithin either.

As I am soy intolerant I have cut out peanut butter. None of us eat it anymore since it is so close to the soybean. I will have to look up that recipe. I saw it but didn't look at it. I figured I'd try almond butter.

This is a recipe I came up with--it's based on a wheat-free cookie recipe from Nestle, but I made several changes--

Grain Free Chocolate Chip Cookies

Mix in bowl until light and creamy: 1/2 cup light brown sugar, 1/2 cup Spectrum Organic Shortening, 1 egg, 1 tsp. vanilla.

Add: 1 tsp. baking soda, 1/2 tsp. salt, 1+ 1/4 cup potato starch, 1 cup chocolate chips.

Drop by teaspoonfuls onto baking sheet and bake at 375 for about 8 minutes.

*These come out like little cookie cakes :)

I plan to try almond butter in the peanut butter cookie recipe. I wonder if anyone's tried it that way yet?

Mmmmm Dagoba chocolate. I love the xocolatl bar and the lavender bar; the roseberry one is good too!

I'm not really feeling too great this morning/afternoon/whatever. Not quite sure why, I had rough time sleeping last night, got around 4 hours....maybe that has something to do with it? So I can't say there's anything I'm Racheling or wanting to Rachel at this moment in time.

OMGosh, the cookie recipe looks good! I've copied it...also copied a couple from the Peanut butter thread...I think I can handle those...don't look too complicated. I am no Betty Crocker! :lol:

Otherwise I could put up a picture of 1/4 of a donut ... or a cup of coffee ... but I hardly think once a week counts. :( Neither does moderation ....

These days, I can Rachel just about anything. :angry: what is up with that? an ENTIRE bag :ph34r: of Archer Farms Potato Crisps the other day (happy to report they're gluten-free), a whole bag of Trader Joe's white cheddar popcorn in two consecutive nights....and of course...the Nuggets - not even allowed to bring those in.....

Vincent - Racheling the raisins is so.....healthy..... :o:lol:

Gotta go to Walmart, my most dreaded place...but, shouldn't be too crowded on Monday...staying away from the halloween candy aisle :o

We are trying to limit the chocolate chip and cookie consumption to the weekends now. Can't afford all the money we've been spending on treats. I really need to get away from the computer and get something done. I need to make bread, should really make my own cookies, etc.

I'd sure miss you guys if I had to leave this computer for too long. :P

oops, sorry Donna. I meant to post the recipe instead of making you search the board :o

This is the one I used:

1 c. Peanut Butter

1 c. Brown Sugar

1 Egg

1 Tsp. Baking Soda

Bake at 350 for 9 minutes (I did 7-8 minutes) They are a little soft when first out of the oven, but set up as they cool.

The first time I made it I threw in a cup of coarsely chopped chocolate bars (didn't have any chocolate chips on hand so I improvised) The second I just made them plain, very good either way. And so easy Donna, you will totally be able to make them. Very forgiving, I made them small (1heaping tbsp balls) and then bigger (2 heaping tbsp flattened out) and they came out fine both ways.

Thanks Patti for your recipe, and look, they include your beloved patato starch :lol: I'm going to try making the PB cookie recipe with almond butter this afternoon so I will let you know how they turn out.

Susie, stay away from the candy aisle, the aisle of tin foiled wrapped little chocolate evils disguised as goodness :lol:

Andrea, that is what I am starting to do, make my own. It's cheaper for one, but also so much better for us since we can leave out a lot of the extra stuff (i.e. the dreaded soy lecithin)

Little Joe has never played with any toy, other then a simple rope. I'l lhave to take a picture of this pumpkinguy, its probly on the shelf in walmart for twice the price as a new kids toy LOL

Andrea--I meant to tell you this earlier, but my oldest son just dropped by :) The recipe I gave before used to call for almost twice the amount of sugar--it's just as good with the smaller amount of brown sugar.

      so do you have celiac or not? 🤔 why are your vision issues undiagnosed? 😢 what does your ophthalmologist say?  do you have a serious vit A deficiency? what do you take for it? how long have you had celiac disease and how long did  it take to get a diagnosis?   if you are legally blind there are adaptive devices that will help you. I have vision difficulties as well but did not qualify (at least not yet)   do you have a vit A deficiency? why are you undiagnosed? what does your ophthalmologist say? I have a retinal specialist and he tells me my eye condition can not be fixed- until/unless it gets to the point of where surgery is safer since the surgery can leave me actually blind... so you want to wait til it gets really bad 🤪     I hope you find what works for you.    PS   the medication I started at the same time as the gluten challenge is obvious from the condition it's trying to treat. you can google it 😉 it is not an for any auto immune condition.

      during the gluten challenge I did not consume any wheat germ   the wheat germ is TOASTED - it's the only way it is sold now afiak doesn't matter I consume vast amounts of lectin containing foods PROPERLY prepared and have for well over a decade. They do not bother me in the least.    no anemia however the endo who ordered the celiac panel is the one who suggested the 2 week gluten challenge of eating at least 2 slices of bread per day or a serving of pasta- ALSO put me on a new drug at the same time (not a good idea)  I ate 4 slices because they were thin, or 2 English muffins, and just once some lasagna that someone else made since I stopped eating wheat pasta years ago. The English muffins caused some of the worst symptoms but that pc of lasagna almost killed me ( not literally but the pain was extreme) during those 12 days there were at least 3 times I considered going to Urgent Care.   This entire process was a waste of time TBH due to being on that new drug at the exact same time. it is impossible to tell if the drug I am taking for the possible renal calcium leak is working or not- given the dramatic response to the gluten challenge and resulting nausea (no vomiting) and eventually a loss of appetite and lower intake of foods so now I have a dangerously low potassium level   I don't have a simple case of celiac or no- I have an extremely complicated case with multiple variables I am seeing an endocrinologist for a problem with the calcium sensing glands - that system is very complicated and she has been unable to give me a firm diagnosis after many tests with confusing and often alarming results. She also appears to be inexperienced and unsure of herself. but I don't have the luxury of finding a new endo due to multiple issues of insurance, lack of drs in my area, money and transportation. so I'm stuck with her At least she hasn't given up    in any case I can assure you that lectins are not and never were the problem. I know they are a favorite villain in some circles to point to, but I have ZERO symptoms from my NORMAL diet which DOES NOT contain gluten. The longer I went without bread or foods with wheat like raisin bran cereal, the better I have felt. my body had been telling me for several years that wheat was the problem- or maybe specifically gluten, that remains to be seen- and stopping eating it was the best thing I could have done   I almost had unnecessary MAJOR SURGERY due to joint pain that I ONLY have if I am eating bread or related products I assumed it was the refined grains - never really suspected gluten but it does not matter I won't put that poison in my body ever again not that it is literally poison but it is def toxic to me

      @catnapt,  I'm sorry you're having such a rough time.   How much wheat germ and how much gluten were you eating? Lectins in beans can be broken down by pressure cooking them.  Do you pressure cook your beans?  Were you pressure cooking your wheat germ? What drugs are you taking?  Some immunosuppressive drugs affect IgA production.  Do you have anemia?

      oops my gluten challenge was only 12 days It started Jan 21s and ended Feb 1st   worst 12 days of my life   Does not help that I also started on a thiazide-like drug for rule in/out renal calcium leak at the exact same time No clue if that could have been symptoms worse 🤔
