Hi!

Thought I'd ask you folks as the experts: I am having a birthday party for my son this Saturday and would like to make a gluten free cake in a cake tin so my niece can participate. I purchased one of those Wilton cake pans and will likely make a bee for the nongluten cake and a ladybug for the gluten-free one. I'll make the gluten-free one first of course and be meticulously careful to have an immaculate kitchen, but does anyone recommend a particular mix? The gluten-free cake mixes I've tried in the past are yummy and sweet, but they trend towards a bit dense, and I'm bit concerned about how I'm going to get it out of the pan so I can frost it. I'd try Namaste as I see it has been recommended also but they don't have it in town and don't think it could be here on time. Any suggestions for what flour to dust the pan with (after using shortening) are also welcome-I have rice flour/tapioca flour/potato starch, some brown rice flour and sorghum flour, also some Wendy Wark's mixture I made up a little while ago. Thanks for any suggestions! :)

Do you have any xantham gum? If so, I have a recipe you could try, but you need xantham gum and a few other "rare" ingredients for it: xantham gum, white rice flour, tapioca flour, potato starch flour, buttermilk powder. Those are the only uncommon ones needed. If you have those, PM me and I'll send you the recipe.

Can you get Gluten Free Pantry in your area? They have a Cake and Cookie Mix that is really good. I have had good results with just greasing the pan--with no flour--and it came out fine. They also make a chocolate cake mix.

I used the "Cause you're special" chocolate cake mix in a Wilton pan last year and it turned out fine, I did have to add some xathan gum, but I don't remember how much :huh: someone on here told me that trick and said how much and all that, but I don't know where to begin to find it..... :(

I just made my sons first birthday smash cake out of Bobs Red Mill Chocolate Cake mix. I used plain butter to grease up the Elmo pan. He came right out perfectly. I find that cake mix to be very good. I hope this helps. I also find Bobs at my local supermarket.

Yes, we have been aware that this can be an issue with mushrooms but as long as they are rinsed thoroughly it should not be a problem since the mushrooms don't actually incorporate the gluten into their cellular structure. For the same reason, one needs to be careful when buying aged cheeses and products containing yeast because of the fact that they are sometimes cultured on gluten-containing substrate.

      The one kind of food I had been buying and eating without any worry for hidden gluten were unprocessed veggies. Well, yesterday I discovered yet another pitfall: cultivated mushrooms. I tried some new ones, Shimeji to be precise (used in many asian soup and rice dishes). Later, at home, I was taking a closer look at the product: the mushrooms were growing from a visible layer of shredded cereals that had not been removed. After a quick web research I learned that these mushrooms are commonly cultivated on a cereal-based medium like wheat bran. I hope that info his helpful to someone.

Incidentally, I don't like quinoa either. Reminds me and smells to me like wet grass seed. When its not washed before cooking it makes me ill because of saponins in the seed coat. Yes, it can be difficult to get much dietary calcium without dairy. But in many cases, it's not the amount of calcium in the diet that is the problem but the poor uptake of it. And too much calcium supplementation can interfere with the absorption of vitamins and minerals in general because it raises gut pH.
