Anyone Have Recipes For Egg Plant

I'm overrun with egg plant!!!!!! I have made fried eggplant,eggplant type relish, eggplant parmesan. I don't know what else to do with them babies.I have saute' them with zucchini ,mushrooms & spices too.

Any suggestions will be greatly appreciated.....

Back in the day of take out chinese food my dh and I would order spicy eggplant. They usually would use the small Japanese eggplants but I see no reason why you can't try it. I am sure it was thickened with cornstarch and very hot spices, plus garlic. You had to eat it with rice it was so hot. It was yummy!

Send them to me. They're my favorite.... :D The 3 eggplant plants I have growing are 2-3 feet tall, full of blooms, but no fruit yet at all. Weird....

Actually, I usually slice them thinly (discs), lay them on wax paper, salt them, sit for 5-10 minutes, then dredge in cornmeal, then fry in an oil. Yummy!

Also, the cruise I just returned from had thin long slices wrapped around things like shrimp, lobster, mushroom stuffing, cheese, then baked, and served with an appropriate sauce (the marinara was good). They were about the size of a large sushi roll and were great. I plan to make similar dishes in the future.

      I hadn't been eating gluten free before having the antibody test done. I started eating gluten free after having the test done because the gastro PA told me to eat gluten-free for 6 months. I'm now 3 months in.

      I tend to agree with RMJ. Your doc took the reasonable and practical approach to diagnosis. All things considered, it was the right way to go. However, if you have first degree relatives that show signs of possible celiac disease, urge them to get formally tested before they start the gluten free diet.

      It sounds like you have a very reasonable GI doctor, who diagnosed you based on family history and symptoms after eating gluten. I would consider you lucky! The other option would be to make yourself very sick by doing weeks of a gluten challenge prior to an endoscopy.

      Hi Colleen H,   I suffered with the pins and needles/burning feeling in my legs and feet for at least  6 years until my Nephrologist figured out that I had to go on a low salt diet.  He said my kidneys weren't strong enough to remove the salt.  The simple fix was a diuretic, but that med leaves the uric acid behind, so that wasn't an option.  On the bright side the low salt diet lowered my BP over 20 points and and the pins and needles/burning feeling went away.  Good Luck and hope this helps.
