Any Really Good Cake Recipes?

My daughter's birthday party is this weekend...she wants an airplane shaped chocolate cake so I need a recipe for a sheet cake that I can then cut up. The only kind we've ever tried is the chocolate cake from Organ and none of us liked it very much. Can I just use a regular recipe and replace the flour with the Gluten Free Pantry flour? (I did that recently with a banana bread recipe and it was delicious). If not, does anyone have any recommendations for a good cake recipe? Thanks so much!

Get the chocolate cake mix from Namaste. I guarantee you'll love it!!!

Another suggestion is the cake recipes from Annalise Roberts book, Gluten Free Baking Classics, but the Namaste mix is a bit of a shortcut if that's what you're looking for.

This is a great chocolate cake. No one can ever tell it's gluten-free. The gluten-free mix called for is Bette Hagman's mix (6c. rice, 2 c. potato starch, 1 c. tapioca starch)

Gluten Free Chocolate Cake with Cream Cheese Frosting

1 3/4 c. gluten-free flour

1/2 tsp. xanthan gum

2 c. sugar

3/4 c. cocoa

1 1/2 tsp. baking soda

1 1/2 tsp. baking powder

1 tsp. salt

2 eggs

1 c. sour cream

1/2 c. oil

2 tsp vanilla

1 c. boiling water

Frosting

8 oz. cream cheese

1/2 c. margarine

1 lb. powdered sugar

1 tsp. vanilla

Preheat oven to 350 degrees. Combine dry ingredients in a medium bowl. Beat eggs well. Add milk, oil, and vanilla. Beat in dry ingredients. Slowly add boiling water, and mix well. Batter will be extremely thin. Pour into a greased pan. Bake a 9x13 pan for 35-40 min. Bake a 13x18 pan for 17-20 minutes.

Frosting: Cream together cream cheese and margarine. Beat in powdered sugar. Add vanilla.

I haven't tried making one from scratch yet. I like Pamela's Luschious Chocolate Cake mix. It's moist enough I'm sure you could cut it into pieces to make a plane shape, or even bake in one of those Wilton shaped cake pans. Good luck!

Chocolate Cupcakes

1 Cup Brown Sugar

1/2 cup butter (1 stick)

2 eggs

2 teaspoons vanilla

1/2 Cup Buttermilk

1/2 Cup Milk PLUS 2 Tablespoons milk

Dry Mix: see note:

1/2 cup Soy Flour

1/2 Cup Potato Starch

1/2 Cup Tapioca Flour

1/2 Cup Cocoa Powder

1 1/4 teaspoons baking soda

3/4 teaspoon salt

1 scant teaspoon Xanthan Gum

Note: this recipe is very forgiving, I have played around with the flour mix a lot, so it should be easy to substitute something for the soy etc.

Cream butter, and sugar, add eggs & vanilla, mix, add flours & milks alternately, beginning & ending with some flour. Fill 12 cup cake liners set in muffin tins, bake at 350 degrees for about 25 minutes or until a toothpick inserted in center comes out clean.

AIRPLANE: what I am seeing at the fancy bakeries is that they are taking cupcakes & putting them together to form a shape, & adding icing to cover the tops & decorate, I saw a butterfly done the other day, an airplane should be sorta easy.

I adapted this recipe from some cookbook that I have long forgotten. It does not have rice flour, because I omitted it because I really do not like baking with it. I was thinking of subbing in some almond flour when the grandkids went back to gluten :angry: & I quit making this cake. We all loved it. We could not tell it was gluten-free. this cake has an excellent texture. I also like the combination of the buttermilk & regular milk.

I really like Bob's Red mill gluten free chocolate cake mix. I substitute flax for eggs and it is still yummy !

I just wanted to comment that we made Betsy's chocolate cake recipe and it is AWESOME. It did not taste gluten-free and was better than some "normal" chocolate cakes. My nephews who are NOT used to gluten-free food gobbled it down. I was trying to make it look like a choc zuchinni cake my son was missing out on so we just put choc chips on top instead of frosting. It was wonderful. We are planning on using to make Luke's tractor birthday cake next weekend--we will use frosting this time. :) Kendra

we have never used a gluten free cake mix. we just use our old favorite recipes and replace the flour with a gluten free blend and xanthan gum.

Just wondering if anyone had done a recipe with Millet, quinoa, or Sorghum for the major dry ingredient.

I don't like to use rice or a lot of starches since they really reak havoc on the glycemic index. My little guy needs high protein to function as well -- no protein = very cranky, yelling, screaming, fit throwing, punching, angry little boy.

I agree with Jillian - the Namaste Chocolate Cake mix is unbelievably delicious! The batter is pretty runny and it took longer to bake than the package said, but it turned out soooooooooooo good. My whole family ate it - and they won't typically eat gluten-free substitutes. It has the texture of a brownie - and it was not gritty AT ALL!

My sweetie made it for me for my birthday in May and topped it with homemade cream cheese icing. It made my day!

I use white rice flour, but I don't think there's much problem with using brown instead. (Except that the brown tends to spoil faster because of the higher fat content (according to Bette Hagman).) So if you want to use brown rice flour, just make a smaller batch of flour mix, or refrigerate it.

I used brown rice flour in the mix when I made Betty's cake and it was great. Actually I always use brown rice flour in my baking because it has more nutrition in it. :) Kendra

Thanks! I actually made muffins and chocolate chip cookies today with the brown rice flour instead of white (since I ran out of white rice flour a few days ago) and they turned out good - the cookies actually taste like my old gluten tollhouse cookies! Can't wait to try making the cake!

Sorry it took me so long to say thank you to all of you who responded to my post about a chocolate cake. I ended up finally finding a Namaste mix and it was delicious! Everyone loved it - gluten eaters included! We baked it in a round pan and decorated the top as a runway - fruit leather for the landing strip, yellow frosting down the middle for the taxi line, blue dots along the sides for the reflectors, coconut dyed green along the sides for grass at the edges of the runway and little toy plane. She loved it! Thank you all so much for your suggestions - I knew I could count on all of you for help!

      I  notice a reaction to tea bags, possibly due to gluten or other substances. Is this recognizable?

      The blood tests you had done are not the main ones. The two main ones are the "Total IGA" (to check for IGA deficiency) and the "TTG-IGA". Current guidelines for the "gluten challenge" when people have been gluten free for a significant time period are the daily consumption of at least10g of gluten (about the amount in 4-6 slices of wheat bread) for at least two weeks leading up to the day of the blood draw. That should give you some perspective.

      Thank you, really.  I took a test for DGP-IgA and DGP-IgG. Effectively, it is not enough to discard Celiac Disease. I was consuming gluten until then, I only started gluten-free some days ago, when the symptoms became horrible and now I feel considerably better, which is a second confirmation that gluten is the main problem. It's been more than 4 years I have the same suspect, when I first thought gluten was causing me problems, I made a gluten-free diet for a year, I felt really good as never before. However, neither I or my parents were well informed about Celiac disease, so none of us tried to make further exams. My father suffer digestive problems and other members of my family as well. Unfortunately, no one have ever been tested for Celiac disease. I'll have to restart eating gluten in the next weeks, so I can make a serious blood test in laboratory, hopefully between two or three months.

      As Scott said, in order for celiac disease testing to be valid, you need to be eating generous amounts of gluten on a regular basis for weeks or months before the blood draw. The blood tests are designed to detect antibodies that the immune system produces in response to the ingestion of gluten. It takes time for them to build up in the blood to detectable levels.
