Tater Tot Casserole With Home Made Cream Of Mushroom Soup

1 pound ground meat (beef, turkey, buffalo) browned and seasoned with salt and pepper and garlic powder

1 can of corn drained

1 small jar of mushrooms or fresh mushrooms

1/2 stick of butter

1/4 cup Orgran's All Purpose gluten-free flour

1/4 cup diced onions

2 cups of milk

salt and pepper to taste

1/2 bag of gluten-free tater tots frozen

In a small casserole dish put the cooked ground meat in the bottom, pour the can of drained corn over the meat, layer with frozen tater tots, cover with home made cream of mushroom soup (saute onions and mushrooms in tablespoon of butter, add rest of butter, 2 cups milk, remove from heat, stir in 1/4 cup Orgran's gluten-free all purpose flour and salt and pepper to taste, add more milk if too thick)

bake for 30 minutes at 350, enjoy!

wow this sounds so yummy! was it crispy? i love my tots crispy!

and i would try w/ soy milk if you can instead of rice milk, cuz i know it acts as regular milk in baking better...and rice dream isn't safe...just fyi :)

ah, just read you don't do soy...nevermind on that one then :P

I usually just blend up my own cashew or almond milk. It's the butter.....I'd probably use the spectrum shortening, otherwise coconut oil.

you could use whatever gluten-free dairy free soy free margarine or shortening you prefer, I just like butter.

Isn't Lundberg Farms Rice milk gluten-free? I know Rice dream isn't.

Anyway, some of the tots were crispy, you could probably cook it just a little longer for a more crispy tot, over all it had a really good flavor and texture... I was pleased with how it turned out. Hubby had two helpings and my daughter ate all hers (big accomplishment for her)

I used the organic buffalo meat with mine but the original recipe called for ground turkey.

I just used a regular sized bag, 1/2 of the bag basically, enough to cover the entire pan...

This looks delicious. What's a safe brand of tater tots? Or are most safe? I'm a recently diagnosed celiac and haven't looked into tots yet.

I don't know! I threw the bag away and hubby already took out the trash! I basically just used enough tots to cover the meat and corn completely, then drowned it in the cream of mushroom soup...

I used the Publix brand, they were listed on their 9 page list of Publix brand products that are gluten-free. I've also used Cascadian fams tots in the past... Just read the ingredients listing, the ones I use, use rice flour instead of wheat.

I bet it would work if you shred the potatoes, either with a food processor, or a hand-held grater!

I think that would work fine. I would slice the potatoes very thin.

Yummy ~ my family loves tator tot casserole too!!

Andrea ~ we are dairy/soy/rice free too. I make my creamy soup with chicken stock. It's delicious!!

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
