Thanksgiving Dessert Success

Hi all,

I had to share my Pumpkin cake success with you! I needed a dessert for Thanksgiving dinner that was gluten free and also vegan (for one of my guests). Nameste cake mixes have specific directions for using egg-replacer, so I thought I would try their spice cake and use pumpkin in it. The recipe called for something like 1/2 cup oil plus 1 cup water plus 3 eggs. Here is what I did:

1 pkg Nameste Spice Cake mix

4 1/2 teaspoons egg replacer powder plus 6 tablespoons soy milk (this equals 3 eggs)

1/4 cup oil

1 1/4 cup pumpkin

approx 1/4 cup more soy milk to get the right consistancy (seemed too thick).

I baked it in a greased bundt pan at 350 for about 40 min.

Then I made a light glaze with powdered sugar and soy milk to drizzle over it.

It turned out so good! Everyone, including the 'regular' eaters gobbled it up. :D

Pam

Looks yummy. I'm going to copy off this recipe and make it soon.

Isn't it nice when the gluten-free food is enjoyed by those not restricted.

pam, that sounds great, and i'm sure your vegan guest really appreciated that someone took the time to meet their dietary restrictions. :D

Welcome to the forum, @yellowstone! The most common ones seem to be dairy (casein), oats, eggs, soy and corn. "Formed" meat products (because of the "meat glue" used to hold their shape) is a problem for some. But it can be almost anything on an individual basis as your sensitivity to rice proves, since rice is uncommonly a "cross reactor" for celiacs. Some celiacs seem to not do well with any cereal grains.

What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.
