i am trying to develop a new product for celiacs. So first i need people to fill in this questionairre:

1. Do you think that

a. there are not enough sweet products for celiacs

b. there are not enough savoury products for celiacs

2. If you just chose sweet do you feel that there is not enough:

a. buns, scones available for celiacs

b. cakes

c. pastries

d. chilled deserts

e. hot puddings

I don't know.........maybe not enough savory, although I'll always welcome another sweet product :P

I don't really eat hot puddings...I've never been a big cake person.......so if you made a sweet product, maybe a pastry or chilled dessert.

I think people just make their own sandwiches, there are already good pastas....I would probably bread my own chicken, and I'd probably say ready meals. Although many celiacs here have turned into chefs, you don't always want to cook every day and therefore we sometimes make extras for leftovers. If there were more ready meals that you could just pop in a microwave, I think they'd be good for celiac who don't like to cook or those who want a break from cooking......

4. What prices would you not mind paying for a product

a. similar price to products which do contain gluten

b. slightly more than products which do contain gluten

c. twice as much as products which do contain gluten

Part of the reason celiacs cook their own food is on account of the expense.......the higher the price of the gluten-free food, the more likely celiacs are to make it themselves, so the lower the better.

5.When you eat do you prefer it if everyone else has the same as you?

a. yes

b.no

Sure....it makes things easier and there's less worry about contamination--and if the price is about the same, celiacs would be more likely to have the whole family eat the gluten-free food.....

6. How old are you?

Not for myself, but there are just as many, perhaps more overweight celiacs than underweight............so I, personally, would say no

1.B -Savory would be my choice

2.F - Puff pastry. Very hard to duplicate in a gluten free variety, but would be a wonderful addition to the large amount of wonderful gluten-free goodies already available.

3.E - croissants that are soft and flaky like the "real" thing. Also battered fish and breaded chicken would be nice.

4.A - a higher price means I buy less (or none!). I've got 4 people in my family that need the gluten-free diet.

5.A - we all eat the same at home.

6.C - 32

7.B - I do not need low fat.

8.B - I do not need low sugar and cannot tolerate artificial sweeteners.

9.B - No to both.

Spellcheck could help you with words like professor, benefit, questionnaire, sandwiches, savory, spaghetti and battered. :D Nevertheless, here are my answers to your questions:

(1) Not enough of either without added dairy or soy.

(2) f "Other" Since I must also avoid dairy and soy, I would like more gluten/dairy/soy free sweet choices, esp. chocolate anything.

(3) d "ready meals" Very few are gluten/dairy/soy free currently. I know not all celiacs must restrict other ingredients besides gluten, but many must avoid dairy and/or soy, as I must. So I would like to see more savory products free of those.

(4) a Same price as gluten containing foods, although 'supply and demand' may always push gluten-free food prices up.

(5) Doesn't matter to me.

(6) e "Over 45"

(7) b NO

(8) a YES

(9) b NO

1a. I can have milk and chocolate, so I get way plenty of sweets

b. I use herbs to make my foods savory.

2. I cannot have rice or eggs, so I pretty much do without all of these products unless I make them myself.

4. I don't mind paying a little bit more, but I don't understand why I should have to. These items can be made mainstream, in a factory, just like other foods.

5. I really don't care, it does not bother me to eat different from others.

6. I am wonderful, glorious 40!!!

1. I think that there are enough sweet products, and enough of just about every product on the market--except doughnuts. I really miss Eclairs and Krispy Kremes.

3. LOL...I'm still on my doughnuts kick...I have been sooo content with the other gluten-free products I've found.

4. If the product were in a store, I'd pay as much as I'm paying for my other gluten-free products now. If it were in a four-star restaurant or I was treating a family member/boyfriend/friend to a meal, I'd pay more $$.

5. It doesn't matter if someone eats different foods than me...I wouldn't want to deprive them of their dining experience...God Bless them for having nothing dietary to worry about!

On the whole, however, I don't purchase a lot of premade food, so I'm not a good example of your target audience.

      Hey @Butch68, I also have dermatitis herpetiformis but don't suffer from it anymore. I used to drink Guinness too but I drink Cider now when out on social occasions. I assume you are in Ireland or the UK. If it's any good to you ... 9 White Deer based in Cork brew a range of gluten-free products including a gluten-free Stout. I'm not sure if they are certified though. https://www.9whitedeer.ie/ I haven't come across any certified gluten-free stouts this side of the pond.

      This is a very common question, and the most important thing to know is that no, Guinness is not considered safe for individuals with coeliac disease. While it's fascinating to hear anecdotes from other coeliacs who can drink it without immediate issues, this is a risky exception rather than the rule. The core issue is that Guinness is brewed from barley, which contains gluten, and the standard brewing process does not remove the gluten protein to a level safe for coeliacs (below 20ppm). For someone like you who experiences dermatitis herpetiformis, the reaction is particularly significant. DH is triggered by gluten ingestion, even without immediate gastrointestinal symptoms. So, while you may not feel an instant stomach upset, drinking a gluten-containing beer like Guinness could very well provoke a flare-up of your skin condition days later. It would be a gamble with a potentially uncomfortable and long-lasting consequence. Fortunately, there are excellent, certified gluten-free stouts available now that can provide a safe and satisfying alternative without the risk.

      Interestingly, this thought occurred to me last night. I did find that there are studies investigating whether vitamin D deficiency can actually trigger celiac disease.  Source: National Institutes of Health https://pmc.ncbi.nlm.nih.gov/articles/PMC7231074/

      Before being diagnosed coeliac I used to love Guinness. Being made from barley it should be something a coeliac shouldn’t drink. But taking to another coeliac and they can drink it with no ill effects and have heard of others who can drink it too.  is this everyone’s experience?  Can I drink it?  I get dermatitis herpetiformis and don’t get instant reactions to gluten so can’t try it to see for myself.

      NCGS does not cause damage to the small bowel villi so, if indeed you were not skimping on gluten when you had the antibody blood testing done, it is likely you have celiac disease.
