Superbowl Party Dilemma

Having folks for Superbowl Sunday. Originally we were going to make fajitas, chips/salsa, tortilla soup, etc. Well...MAJOR wrench thrown in the works. Friend of mine's husband had MAJOR allergic reaction on Sunday - not sure exactly what caused it yet....rushed to ER, 4 doses of epipen, hives head to toe....it was MAJOR, could have died.

ANYWAY...he cannot have ANYTHING he had the morning.....dairy, pork, tomatoes, or black pepper. (and of course, needs ot be gluten free for me, and soy free for her daughter as well!!!)

We're thinking wings....but not sure what else to do with it....HELP!!!!!!!!!!!!

As far as what to serve - wouldn't wings require tomato in the sauce???

What about small sandwiches with varied fillings - without cheese, of course - like chicken or tuna salad, sliced meats, etc. With lettuce, mustard, mayo. Meat rolled in corn tortillas.

I make a finger food that's tuna or salmon salad spread on thin-sliced zucchini or cucumber.

Hope this helps some - other's may have better suggestions.

No. Wings don't need tomatoes. You fry chicken wings, toss in hot sauce, bake, then retoss in hot sauce. The hot sauce is ALL peppers, no tomatoes.

I'm almost debating about making a pot roast or something because of it! LOL :D Not really party food.

What about picnic type foods, like deviled eggs, potato salad, pasta salad? I use black pepper in all those, but you could easily just omit it. I'm also dairy free, so all those things are dairy free, too.

You could also make honey mustard wings--I make my own honey mustard from a combo of honey, mustard, and mayo--very easy and tastes like restaurant style.

Well, he can't have eggs either (his reaction was to an omlet who had all those things in it - should have mentioned that). So, I also cannot use eggs in ANYTHING I cook.

The more I think about it, the more I'm liking the pot roast idea, if I can find a gluten free beef broth to use. Or maybe stew. AHHHHHHHHHHHHH!!!!!!! Gosh my brain just will not work.

((hugs)) for your friend! I'm so glad that he is ok! Very scary!!

I would just go for something like stew or pot roast that can be thrown in the crockpot and be safe for everyone eating.

Stew sounds like a good idea - especially in a crock pot - people could easily serve themselves.

If he reacted to the tomatoes, I wouldn't serve any food with hot pepper or bell pepper, as they are in the same food family - just to be on the safe side.

Can you all eat corn? Small corn-on-the cobs with dairy-free margarine or even olive oil.

An alternative to commercial broth:

Brown the meat in a skillet with a bit of oil (don't burn). After removing the meat, add some water to the skillet to loosen the brownings - add water to equal the amount of liquid you would normally put in the crockpot.

Hubby & I have been mulling this over.

Here's the menu -

Wings w/ Blue Cheese & Ranch (we're going to keep in the bottle so he's not tempted to dip). When I mentioned wings, the guy said "great" so he's okay with not dipping.

Veggie Tray - we're going to leave the dips in the bottle again, so not tempted, probably use the same ones as for the wings.

Chips

Hot Roast Beef Sandwiches (the broth, trying to determine what I'll do, but it will work). We have a deli near us that has GREAT Roast beef, so I'll be able to use that - just need to make sure it doesn't have pepper on it.)

I'm going to have his wife bring bread he can eat, and I'm going to make GFPantry's French Bread for me. I might even just shape it in roll shapes too.

Then, dessert will be the Wacky Cake (testing again on Saturday in Cupcake form, if it turns out, I'll have the cupcakes to serve).

I made the best pot roast ever using a gluten free beef broth. I used Pacific Natural Foods beef broth...I found :rolleyes: the broth in the organic section of Kroger groceries. Good luck! Hope the best team wins.

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
