Hey Betty,

If I remember correctly, I think you have access to a Whole Foods?

If you haven't tried their Gluten free bakehouse (their store brand) of pizza crusts, I HIGHLY suggest you check it out ;). I don't know how I lived without it (just moved to a whole foods area this fall). I use it for pizza, cheese sticks, garlic bread, appetizers (veggie pizza with crust, cream cheese, veggies, etc), etc. It is in their frozen gluten-free section by the bakery with their other products.

I have tried various pizza crust recipes, and to me, this one is better and so much easier. I LOVE THEM and think I am going to go make some for lunch ;).

Also---did you see that I posted my mom's banana bread recipe in your bb thread? Sorry it took me so long to get to you.

another thing---the taquito's I mentioned from WF were "Whole Kitchen" in a blue box. Yummy.

thanks laura, I haven't tried the their crust yet, I will look for it when I shop at whole foods..is it just a big ball of frozen dough? big enough to feed 3 ppl?

also, thanks for the bread recipe and the taguito tip, I'll grab those too lol

Amy, thanks for the link..it sounds very good, would never think to use gelatin or coffee creamer in pizza crust

It is a pre-made crust, already cooked, ready to go....just frozen. I forget how many come in a pack (maybe 2? 4?), and they are not as big as say, like a pre-made boboli (regular) crust. I take it out and thaw it, and then use it like normal.

ingredients for pizza crust:

Tapioca Starch, White Bean Flour, Sorghum Flour, Nonfat Dry, Milk, Yeast, Xanthan Gum, Lemon Juice, Olive Oil, Salt, Gelatin, Sugar

Not sure if that amount of bean flour will bother you though?

I make this about once per week for the whole family. Usually I double the recipe and make 2-3 extra small crusts and freeze them for future use.

Pizza

Bette Hagman's recipe

1 1/2 cups pizza flour mix

3 tbsp almond meal or milk powder

1/2 tsp salt

1 packet yeast (2 1/4 tsp)

3/4 cup warm water

2 egg whites

1 1/2 tbsp olive oil

1/2 tsp apple cider vinegar

mix well on high 3 1/2 minutes

very sticky - spread thin with very wet hands

smooth onto well-greased pizza pans

let rise 10 minutes

Bake 400 F for 10 minutes

can freeze extras after first bake

Toppings

Hunts Traditional spaghetti sauce

Mozzarella cheese

Hormel Pepperoni

Bake additional at 400 F until cheese melts

20 minutes for large

15 minutes for medium

10 minutes for small

makes 2 medium or 1 large & 1 small

Pizza flour mix

I've been solving my pizza cravings with Rice Tortillas. Toast them with olive oil, then cover with toppings and bake again.

Very thin crust, but tasty, fast and cheap.

I use this one from 125 Best gluten-free recipes (Washburn & Butt). I also double, and freeze one after first baking, to use at a later date.

3/4 c. Brown rice four

1/3 c. potato starch

1 tsp granulated sugar

1 1/2 tsp xanthan gum

1 1/2 tsp bread machine or instant yeast

1/2 tsp salt

1 tsp dried oregano

3/4 c. water

1 tsp cider vinegar

1 tbsp vegetable oil

the usual method - mix dry ingredients well, add to wet, mix slowly until blended, and then mix for about 4 minutes. Spread on pizza pan, using white rice flour to stop sticking. (I use olive oil instead - more calories, lovely "Pan" crust.) Rise 15 minutes, bake at 400F for 12 to 15 minutes. Top and bake as required for fillings.

I use Pamelas to make my pizza crust and we like it. One day I thought I'd be a nice wife and make two cause my husband likes all the junk on his-of cause I had to pick up another pizza pan. That's when pizza changed for us! I picked up a bakers secret pan to make the loaded pizza and for the first time going gluten free we could cut a pizza in triangles and hold it like before. Sure didn't know a pan would make all that difference!!! Also I poke the pizza crust everywhere with a fork before putting it in the oven. Also I set the yeast mixture on the stove to proof-it just seems to do better. We have had pizza at least once a week since. My Meg even reheats the leftovers to eat. I feel normal again!!!!!!!!

I love this recipe because the crust doesn't get soggy

3 cups of cooked rice (I use Jasmine rice)

2 eggs

1 cup of cheese (I use Cheddar)

Mix it all together and press onto a greased 12" pizza pan. Bake at 450 for 20 minutes. Remove from oven and top as you wish. Return to oven and cook 10-12 minutes longer, then serve

Foldable Floppy No Breakage 'New York Style' Pizza Crust - easy and delicious!

Here's a recipe I finally happened upon recently, and it worked great! Perfecto! Makes us a huge extra large pizza that is totally floppy and foldable and no breakage whatsoever, wow! So glad to be able to have pizza again!

I use butter for non-stick on pans, from pizza crust to muffins, works way better for me than oils, way better!

Foldable Pizza Crust

Ingredients:

2 tablespoons rapid rise yeast

1 1/3 cup warm milk

1 teaspoon sugar

1 1/3 cup brown rice flour

1 cup tapioca flour

4 teaspoons guar gum (xanthan gum interchangeable, same measurements, I use guar gum)

1 teaspoon salt

2 teaspoons unflavored gelatin powder

2 teaspoons dried Italian seasoning (I leave this out in mine, will try it sometime though)

2 teaspoons oil

2 teaspoons apple cider vinegar

Directions:

Preheat oven to 425 degrees.

In a small bowl, dissolve yeast and sugar in warm milk.

In a separate larger bowl, blend together dry ingredients.

Stir in yeast mixture to dry ingredient mixture.

Add oil and apple cider vinegar.

Mix well.

Butter and flour the pizza pan (just like you grease and flour a cake pan).

Pat down dough on pan, sprinkle top of dough with flour so dough doesn't stick to your hands as you're shaping pizza.

Bake 10 minutes.

Remove from oven and add toppings.

Return to oven and bake for another 20 minutes.

The last dietitian I met with works with a lot of celiac patients, so I was excited, but she just thought I should be able to eat gluten free (whatever that may be) stay in a carb count and my diabetes would not be affected.       Interesting! Recent labs I had done did show that I was low in Vitamin D so I just began supplementing, it’s hard to tell so soon but it does seem to have a positive affect! Thanks for the input!
