I am a Brownie leader for my oldest DD and cookies are in! My middle DD is actually having the hardest time handling the fact that we can't eat them. She has gotten into someone else's orders twice now and glutened herself. Ugh. Any recipes out there for Samoa type cookies? That is/was her favorite and I would love to tell her we can make some soon.

I know there is a recipe out there for Thin Mint cookies. Another Girl Scout mom is going to share the recipe with me afters he tries it out. (Just found out Friday that her daughter was diagnosed celiac a year ago-small world!)

Could you please post the Thin Mint recipe when you get it, those were my fav's. In fact I just got my order in three days before I was diagnosed :( Had to put 'em in the breakroom for the vultures at work. Argh!

Thanks so much! Through the other thread posted, I found Open Original Shared Link. The only gluteny ingredient listed is a box of shortbread cookies. I'll use MiDel animal cookies and it should be all good.

I can't wait to get some coconut and try them out for her!

Hi to all you Girl Scout Cookie Lovers:

I have a small Gluten Free Gift Basket Business and most of the favored requests of my customers are items that are not commercially availabe to their recipients; and that they really miss alot.

This time of year, Girl Scout Thin Mints is a real popular item and I have developed the following recipe that turns out beautifully. All of my tasters, both celiac and non-celiac, say you can't tell the difference. It is a real pleasure to provide my customers with a gift basket that is so personal and special to their recipient. That makes it a true gift.

I hope you will try these, you will love them.

GLUTEN FREE GIRL SCOUT THIN MINTS

WAFERS

1 18 1/2 oz Fudge Cake Mix (I use Namaste but this is only about 1/2 bag)

3 T Melted Shortening

1 Egg

3 T Water

1- Combine the cookie ingredients in a large bowl, adding the water a little bit at a time until the dough forms. Cover and chill for 2 hours.

2- Preheat oven to 350 degrees.

3- Two Methods: On a lightly floured surface, roll out a portion of the dough to just under 1/16 of an inch thick. To cut, use a lid from a spice container with a 1 1/2-inch diameter. OR Another method, which is faster, is to make little balls and flatten to 1/6 of an inch.

4- Arrange the dough rounds on a parchment lined cookie sheet. Bake for 9 minutes. Remove the wafers from the oven and cool completely.

COATING

36 oz of very good and very dark chocolate (I use 3 bags of Hersheys VERY DARK chips)

3/4 t Peppermint Extract

4 T Shortening

1- Combine chocolate chips with peppermint extract and shortening in a large microwave-safe glass or ceramic bowl.

2- Heat on 50 percent power for 2 minutes, stir gently, then heat for an addition minute.

3- Stir once again, and if chocolate is not a smooth consistency, continue to zap in microwave in 30-second intervals until smooth.

4- Use a fork to dip each wafer in the chocolate, tap the fork on the edge of the bowl so that the excess chocolate runs off, and then place the cookies side-by-side on a wax paper-lined baking sheet. (I know this fork method sounds funny, but it works better than any other tool)

Hi Sweetfudge-

So sorry its taken me so long to respond, but I've been away from the forum for a while. To answer your question, I started this little gift basket business mostly to fill a need rather than create an income; as I already have a full time job. With so many celiacs in my family, this gluten-free thing has become quite an avocation for me. I just wanted celiacs to have the opportunity to receive a nice gluten free gift basket; and friends and families to be able to give a very special personal gift. Ok, I followed this recipe for the thin mint cookies. The coating didn't exactly turn out the way I would have liked. I got it melted, then tried dipping the cookies in. The chocolate wouldn't stick. Don't know if it's cuz I used flour to press the cookies before baking, or if it's cuz I used margarine instead of shortening. so I tried to spread the coating instead. That worked okay. I didn't love the combination though. The cookies were great by themselves though :D

      I have trouble with nausea. It often starts when I’m anxious about something (home repairs, sick dog) but continues long after the home is repaired or the dog is healthy again. When it happens I eat less and lose weight.  My gastroenterologist suggested ginger or peppermint tea. I don’t know if that will work or not because I haven't had the problem since she suggested it.

      Hello  I'm not sure what to think . Seems no matter what I do I get sick. I had some yogurt with only 2 grams of sugar and is labeled gluten free ...the strawberry version seemed to really set me off My jaw is burning as well as my stomach and my feet.  Horrible pain..plus acid reflux and nausea... sensitivity to touch pain. ..yikes !! I don't know if it's from the lactose in the yogurt or if I'm getting an ulcer  This condition can make you question yourself quite a bit.  Then if you are not sure the anxiety comes 😞 Does any of these symptoms sound familiar to anyone? The neuropathy is quite intense.  What do you eat or drink after this happens  Open to suggestions  Thank you

      Of course my son is on a 100% gluten free diet.  I wish his symptoms were not debilitating as there are right now.  He cannot work, even when a miniscule of cross contamination occurs.  It's not just GI distress, but intense fatigue, brain fog, depression, anxiety, insomnia, etc.  It's literally neurological inflammation.  Not to be taken lightly here.  We have sought out many other possible ways to cope during this window of time (8 months!!!!)  without success.   AN-PEP does not help and seems like studies on this are not well researched.  So, we are trying this out because research shows some promising results.  And, all participants showed no cravings afterwards, no signs of addiction.  The patch is different than the oral route such as smoking, vaping, gum, pouch, etc.

      Have you tried AN-PEP enzymes, for example, GlutenX (who is a sponsor here)? A lot of research has shown that it can break down small amounts of gluten in the stomach, before it reaches the intestines. It might be a better approach than risking nicotine addiction, and the questionable research around this. I also hope that he’s trying to be 100% Gluten-Free.

      Hi all  I was diagnosed Coeliac a few years ago and follow a gluten free diet. The list of foods that I can eat without a problem grows shorter on a weekly basis. [I also have diabetes and asthma also].  BUT the reason I am posting this is because I seem to struggle with nausea quite a lot, which is really quite debilitating, and I was wondering if others suffer from nausea, even if following a gluten free diet.
