Opinion On Joan's gluten-free Great Bakes

I just checked out the website, and gosh, everything looks amazing! But the prices--holy cat, $12 for 6 English muffins even before shipping charges? And I looked at the ingredients, and there's nothing expensive there--just cornstarch (89 cents a pound), tapioca (69 cents a pound), rice flour (69 cents a pound), and corn meal (79 cents for 12 ounces). Just like the English muffin recipes in my gluten-free cookbooks!

I'm willing to pay a premium for convenience, but not 20 times what it would cost me to make it myself. I simply can't afford it. :(

If you have bought all the other English Muffins like I have ,and then tasted Joan's you would know that there is something very different about them.The taste,texture appearance are so superior maybe the way they make them is very different. All I know is I threw the others out because they crumble and taste awful.These taste like really good food.

ATTENTION all you people who are throwing out inedible bagels and other breads!!

I discovered a great way to use these things without having to eat them. :) Take a cheese grater or a food processor (cut the bread or bagels up before you put them in there) and "grate" the whole thing and then put the remaining crumbs in a bag with a bunch of spices that you like - and then you can use them like normal bread crumbs! They're great on chicken or fish or sprinkled on a salad, whatever! I just can't bear to throw out incredibly expensive food, but I can't eat it either. Seriously, some of that stuff has actually made me gag. <shivers>

Oh, I absolutely agree with you about all the pre-made English Muffins!

My point, though, is that, unlike bagels, English Muffins are relatively easy to make from scratch (about on the same level as making biscuits from Bisquick), and all the recipes I have tried taste great.

Excellent point from sansglutengirl about inedible gluten-free breadstuff--I have made croutons from too-dry bread (fry cubes in butter, olive oil, garlic, and Italian seasoning) and used crumbs as breading for chicken fingers.

I am very excited to try the bagels (after Passover of course!) I haven't had a decent gluten-free bagel. The Enjoy Life ones are awful and don't deserve to even be called "bagels".

I CAN NOT WAIT TILL IT IS OVER!!! I MADE A MATZOH THAT TASTES LIKE CARDBOARD AND I CAN'T WAIT TO SINK MY TEETH INTO AN EVERYTHING BAGEL!jOAN'S BAGELS ARE DELICIOUS AND i AM SOO TIRED OF CARDBOARD! IT IS ALMOST OVER.

For anyone who is interested, and lives in the area, Joans will be at the celiac fair in NY coming up! I am not ordering anything online, I hope she will be selling it there and I can just bring it home without paying a shipping charge.. some vendors will be selling, others I am not sure, but her name was on the vendor list last time I looked!

Hi Tinkerbell, the vendor fair was great,so many people and sellers of all kinds of gluten-free products,It was wonderfull to be able to walk around and just eat and taste everything. The standout was Joan's pizza OMG it is a real pizza. Did yoou try it ?She had about 10 pies made up for sampling and they disappeared in a minute. She is now selling the crusts but ran out right away at the fair. I have not had those blisters in the roof of my mouth in years ,yeah pizza burn. Hers is great!!!

I got my bagels, muffin and the date nut bread. They are all excellent!! Did you get yours broncobux? I am going in for some surgery and am really happy knowing I have a stash safely in my freezer as my husband will have to cook for me for a couple weeks! Oh, and Joan has said she is going to sell a chewy ready made pizza dough and bread dough soon on her web site! I can't wait. I love knowing I don't always have to make things from scratch, sometimes I'm too busy or sickly. Plus Joan's tastes WAY better! If anyone else tries Joan's, I'd love to hear how you like it.

I started with pizza at the vendor fair,but the English Muffins were gone by the time I got there. I just got my first order today and now I know what you all mean WOW they are ENGLISH MUFFINS,nooks,crannys and taste!The pizza is amazing,the muffins are amazing . I havent made the bagels yet.Cant wait for the Sunday times and some lox and cream cheese

I know what you mean.

I got my Vegas Celiac Support Group to do a big order from Joan's (to save money on shipping) and so far, it has been a hit!

Love those English Muffins - they taste like the real thing - I make Sausage McMuffins at home with them when I can!

Hi Loraleena,As far as I am concerned the main ingrediet is MAGIC ,but there is an ingredients page on the website www.gfgreatbakes.com.Almost all the products are listed.

      @catnapt,  Wheat germ contains high amounts of lectins which are really hard to digest and can be irritating to the digestive tract.  They can stimulate IgG antibody production as your blood test shows.   Even beans have lectins.  You've simply eaten too many lectins and irritated your digestive tract.   You may want to allow your digestive tract to rest for a week, then start on gluten in "normal" food, not in concentrated vital wheat gluten.       I take Now B-1 (100 mg) Thiamine Hydrochloride, and Amazing Formulas L-Tryptophan (1000 mg).   Both are gluten free and free of other allergens.  I've taken them for a long time and haven't had a problem with them. I take Vitamin A from BioTech called "A-25".  It's gluten and allergen free and made in the USA.  It's a powder form of Vitamin A.  I was having trouble digesting fats at one point, but found I tolerated the powder form much better and have stuck with it since.   Tryptophan and Vitamin A help heal the intestines as well as improves skin health.  I get Dermatitis Herpetiformis and eczema flairs when my stomach is upset.  So I'm healing the outside as well as the inside.   I take one 1000 mg Tryptophan before bedtime.   With the Thiamine HCl, take 100 mg to start.  If you don't notice anything, three hours later take another. You can keep increasing your dose in this manner until you do notice improvement.  Remember not to take it in the evening so it won't keep you too energized to sleep. When I first started Thiamine HCl, taking 500 mg to 1000 mg to start was recommended.  If you've been thiamine insufficient for a while, you do notice a big difference.  It's like the start of a NASCAR race: Zoom, Zoom, turn it up!   This scared or made some people uncomfortable, but it's just your body beginning to function properly, like putting new spark plugs in your engine.  I took 1000 mg all at once without food.  It kicked in beautifully, but I got a tummy ache, so take with food.  I added in Thiamine TTFD and Benfotiamine weeks later and felt like I was Formula One racing.  So cool.  You may feel worse for a couple days as your body adjusts to having sufficient thiamine.  Feels sort of like you haven't cranked your engine for a while and it backfires and sputters, but it will settle down and start purring soon enough.  Adjust your dose to what feels right for you, increasing your dose as long as you feel improvement.  You can reach a plateau, so stay there for several days, then try bumping it up again.  If no more improvements happen, you can stay at the plateau amount and experiment with increasing your Thiamine TTFD.  It's like being your own lab rat.  LoL Yes, take one Benfotiamine at breakfast and one at lunch.  Take the B Complex at breakfast. Take the TTFD at breakfast and lunch as well.  I like to take the vitamins at the beginning of meals and the NeuroMag at the end of meals.   You may want to add in some zinc.  I take Thorne Zinc 30 mg at breakfast at the beginning of the meal.   Are you getting sufficient Omega Threes?  Our brains are made up mostly of fat.  Flaxseed oil supplements, sunflower seed oil supplements (or eat the seeds themselves) can improve that.  Cooking with extra virgin olive oil, avocado oil, or coconut oil is also helpful.   @Wheatwacked likes phosphotidyl choline supplements for his Omega Threes.  He's also had dramatic health improvement by supplementing thiamine.  You're doing great!  Thank you for sharing your journey with us.  This path will smooth out.  Keep going!

      good luck! vital wheat gluten made me violently ill. I will touch the stuff ever again.

      I wouldn't consider this lucky. I can NOT tolerate the symptoms. And I googled it and I was not even getting 10 grams of gluten per day and I was extremely ill. They'd have to put me in the hospital. I'm not kidding.   I will have my first appt with a GI dr on March 4th   I will not eat gluten again - at least not on purpose   they are going to have to come up with a test that doesn't require it.

      What Thiamine Hydrochloride brand do you take? Is it like the other vitamins I have added? What brand Tryptophan and amount do you take. Thanks
