Hi everyone!

Just a quick question. I have noted that Celiac's should avoid Soy Sauce. In my attempt to be completely gluten free, I am having trouble determining which products to avoid. Do I need to stay away from anything containing soy? Basically, right now I am not eating anything containing Wheat, but are there other ingredients I should be looking for on labels.

I am surviving on Rice and Black Beans :lol: but trying to add eggs and some meats back in. I really appreciate the info posted on Dairy in other posts, I didn't realize I needed to stop my dairy intake initially and will begin to do so tomorrow!! What can I use in my morning coffee? I usually use half & half and obviously can't do that now!

Hi,

Soy sauce is usually out because it is made with wheat (as well as soy). There are some wheat free brands available - maybe some of the others here can recommend (none available in my part of the world).

Soy is not a problem, unless you are also sensitive to it. However, the health benefits of soy are currently under review so don't go overboard on it (particularly the texturised soy protein - fake meats etc. (check out the soy page on Open Original Shared Link if you are interested)), but can use soy milk in place of regular dairy in your coffee.

You may find that dairy doesn't bother you. Try taking it out for a while and see if it makes a difference. If you are not sure, try adding it back in after eliminating it for a while and see if you have any symptoms/change when you add it back in. Not all are bothered by or sensitive to dairy. Don't eliminate things unless you know / can prove you need to, so you diet is as non-restrictive as you can make it.

Even though soy in general isn't as healthy or safe as most people think, the reason to avoid soy sauce is that most of the time, wheat is the first ingredient! There are wheat-free soy sauces out there, one of them being Tamari soy sauce by Life Soy. I think I read that another one is Kikoman (or something like that).

You might want to try goats milk in your coffee. Or almond milk (haven't tried that, as I am intolerant to coffee, but it might be okay).

Some more stuff on soy, I got from various sites. Use of soy products in moderation should be fine, as long as you are not sensitive to it. (Moderators - is it ok to post this sort of info? Sorry if it's not - Please just delete the post).

Soy isoflavones (plant estrogens), should be limited to the 35-45 mg per day beyond which they have been shown to cause thyroid and reproductive system derailment in healthy adults. Soy isoflavones are found in all soy products.

Some examples of the amounts of isoflavones found in single serves of various products.

Silk brand (white wave) soy milk claims to make all gluten-free products as of the last time I looked them up. Kraft has stated earlier that they're thinking of making a gluten-free line, but I haven't seen anything become of it yet, though you can watch for it. On a side note, if anyone else has heard any more of this, let me know. Since I'm one of those who can't have dairy, I really know only of the substitutes in that area, but I seem to be doing fine on it, so I don't understand the health risk. I'm open minded though, so you can be assured that I'll take any valid study under due consideration once its results are presented. I'd surely be dead by now if I weren't willing to make dietary sacrifices for the sake of my health :) What makes me nervous is if I have to eliminate soy, I'm dangerously running out of options due to a number of food allergies coupled with Celiac Disease and Chronic Hypoglycemia. I don't wanna be stuck with rice and black beans like alyssasgabby :lol: That doesn't have adequate nutrition to live on anyway. You should look for more fruits and veggies too. I hope someone posts a list of things to look for on labels for you shortly. I've been gluten-free for so long that I don't have a list any more, and I couldn't list anything worth while if you asked me to. It's all in my head. I look at the ingredients, and I automatically know if I can eat it or not. It's kind of like trying to teach someone how to drive a clutch. I have no idea how! I tried to teach my sister to drive stick shift, and I kept catching myself saying things like, "Just .. GO! Just ------ go forward!" So anyway, I'll leave that up to someone else ;) Best of luck! The hardest part is the first couple weeks! As weeks turn into months, and months turn into years, it all becomes natural! :) I decided to join this forum after so long because I was afraid I might go astray if I didn't keep in contact with people like me.

You might also notice after a while that I have a bad habit of rambling :unsure:

I wouldn't have any soy, dairy or coffee for a few months if I were you. At least until there are some healing... Coffee is a gut irritant and you are slowing your progress by drinking it.

Soy did not bother me for almost 2 yrs after going gluten free, then I became intolerant of it. I too believe soy is not good for any of us. You should be wheat, rye, and barley free, not just wheat. Do not use anything with barley malt in it, or even if it simply says malt, you should avoid.

So far I haven't had any problems with soy. I eat tofu for the proteins and fats, and it seems to help me health-wise. I think the arguments about soy will be ongoing for some time yet. Both sides do make some good points though.

Anyway, Open Original Shared Link makes some wheat-free tamari. I don't use anything like that so I can't make any comments on the taste.

If you want to avoid dairy and soy, you might check out almond milk. I haven't tried in in coffee (my system can't take the stuff anymore), but I think it is pretty tasty.

I also have no trouble with soy. I regularly use soy milk in my coffee and in cooking, and my mother makes soy milk out of soy beans. It's really good when she forgets to put salt in it.

Wal-Mart's Great Value Soy Sauce is Gluten Free! It is also less expensive than the organic kinds. As far as your coffee goes, many of the Coffee Mates liquid creamers are gluten free!

If they contain gluten, it will be clearly listed! You do not have to starve on this diet! There are tons of things you can have! Just to name a few:

Dinty Moore Beef Stew

Hormel Chili

Hormel Turkey Spam (oven roasted or smoked)

Buddig Deli Style Lunchmeats

You are all so AWESOME and Inspiring! I have slowly added some of the foods to my diet, including Veggies and Fruit, some Fritos for snacks, Snickers Bars for my chocolate cravings and even Hormel Black Label Bacon (on my Grocery Store's checklist of "Safe" foods).

I am feeling pretty good, though I just passed a Kidney Stone (OUCH!!). D has almost completely stopped, but I still have Back pain. I saw some other posts on that, and will discuss with my MD on Wednesday.

I want to thank all of you for all of your help! I printed out noglugirl's list and am keeping it with me at all times.

I've used La Choy Soy Sauce because I read it was gluten free and nothing ont he ingredient list stood out as being an issue. Anyone know if that's still true?

      Get tested for vitamin deficiencies.  Though neuropathy can be a symptom of celiac, it can also be caused by deficiencies due to poor digestion caused by celiac and could be easier to treat.

      Thank you so much for your response  Yes it seems as though things get very painful as time goes on.  I'm not eating gluten as far as I know.  However, I'm not sure of cross contamination.  My system seems to weaken to hidden spices and other possibilities. ???  if cross contamination is possible...I am in a super sensitive mode of celiac disease.. Neuropathy from head to toes

      EXACTLY! I was asked yesterday on my LAST video call with Standford and I stated exactly yes absolutely this is why I need the name! One, get proper care, two, not get worse.Im falling apart, stressed out, in pain and just opened email from Stanford stating I was rude ect.I want that video reviewed by higher ups and see if that women still has a job or not.Im saying this because I've been medically screwed and asking for help because bills don't pay itself. This could be malpratice siit but im not good at finding lawyers

      We feel your pain. It took me 20+ years of regularly going to doctors desperate for answers only to be told there was nothing wrong with me … when I was 20 pounds underweight, suffering from severe nutritional deficiencies, and in a great deal of pain. I had to figure it out for myself. If you're in the U.S., not having an official diagnosis does mean you can't claim a tax deduction for the extra expense of gluten-free foods. But it can also be a good thing. Pre-existing conditions might be a reason why a health insurance company might reject your application or charge you more money. No official diagnosis means you don't have a pre-existing condition. I really hope you don't live in the U.S. and don't have these challenges. Do you need an official diagnosis for a specific reason? Else, I wouldn't worry about it. As long as you're diligent in remaining gluten free, your body should be healing as much as possible so there isn't much else you could do anyway. And there are plenty of us out here who never got that official diagnosis because we couldn't eat enough gluten to get tested. Now that the IL-2 test is available, I suppose I could take it, but I don't feel the need. Someone else not believing me really isn't my problem as long as I can stay in control of my own food.

      If you're just starting out in being gluten free, I would expect it to take months before you learned enough about hidden sources of gluten before you stopped making major mistakes. Ice cream? Not safe unless they say it is gluten free. Spaghetti sauce? Not safe unless is says gluten-free. Natural ingredients? Who knows what's in there. You pretty much need to cook with whole ingredients yourself to avoid it completely. Most gluten-free products should be safe, but while you're in the hypersensitive phase right after going gluten free, you may notice that when something like a microwave meal seems to not be gluten-free … then you find out that it is produced in a shared facility where it can become contaminated. My reactions were much-more severe after going gluten free. The analogy that I use is that you had a whole army of soldiers waiting for some gluten to attack, and now that you took away their target, when the stragglers from the gluten army accidentally wander onto the battlefield, you still have your entire army going out and attacking them. Expect it to take two years before all of the training facilities that were producing your soldiers have fallen into disrepair and are no longer producing soldiers. But that is two years after you stop accidentally glutening yourself. Every time you do eat gluten, another training facility can be built and more soldiers will be waiting to attack. Good luck figuring things out.
