Happy But Frustrated With Trying To Bake Certain Items

I am going to have surgery Thurs so I am trying to cook up some things cause hubby will not be able to just stop and get something on the way home-lol

Choc Chip Scones, These went great.

Hamburger buns- jury is out those are on tonights menu OK- UPDATE these tasted ok but more like a biscut than a bun, Am I being too picky or does someone out there have a good reciepe for Hamb Buns ??

Saltine crackers- AAAACCCCKKK, not going well.. What do you all use for crackers like with potato soup or chili ???

Nut thins are a really good cracker and come in different flavors. parmesian cheese shredded and put on a sil pat or parchmet paper, in little flat rounds and baked for about 12 minutes. Rice crackers are good and come in many flavors.

I use the 365 Rice Crakers - i get the ones that are Rice Sesame b/c I think the sesame gets rid of that rice after taste a bit.

I haven't made it yet, but there's a recipe for mock-matzoh crackers. I've heard from many that it's nice and cripy like a real cracker. Reminding me that I need to try it! :D

hello all--my first post here. My dad is the Celiac. We've had a lovely 5 years relearning how to cook all his favorite things. OR most of them. That saltine cracker thing is a problem. As to hamburger buns, have you tried Bette Hagman's bread cook book? We love the hamburger bun recipe--use it for buns, sandwich rolls, and plain dinner rolls. Made with rice flour, cornstarch, tapica and a dab of potato flour if I remember correctly.

My dad just mentioned recently that what he really misses is saltines with peanut butter. So this weekend I'm going to try a few recipes and see what I can come up with. He has false teeth so a lot of the rice crackers and nut thins, which I enjoy myself, are too hard and make his mouth sore.

Can I get your chocolate chip scone recipe? That's the one thing I miss and I'm afraid to bake. I can bake bread but am afraid of the oh-so-delicious scone... :P

There's a recipe for french bread in the recipe section that is SOOO good (search 'french bread') and so easy to make. I've made it frequently and it's GREAT for french bread pizza-which you can freeze and reheat later.

Hi, I've had great luck baking scones. Here is what I do for chocolate chip ones:

1/2 cup unsalted butter

1/3 cup sugar

1 cup Fearns rice baking mix (this is what I've used but I'm sure any would work)

1 egg

1/3 cup half and half (or milk)

1 teaspoon vanilla

1/3 cup mini chocolate chips

Cut butter, baking mix, sugar with a fork until crumbly like pie crust, add egg, half and half, vanilla and stir just until ingredients are combined. Stir in chocolate chips. Drop on buttered cookie sheet. I make 8. Bake at 375 degrees for about 12 minutes. When cool I wrap in plastic wrap and they keep well this way. Enjoy, Wendy

Muffins are easy. I've had great luck and they are pretty close to the gluten ones I remember. I just use the recipe on the side of the Fearns Rice Baking Mix. They also have a brown rice mix that works well.

I had forgotton all about this post- surgery threw me out for a few weeks last year. Since then I have perfected my Choc Cip cookie, Buttermilk Choc Brownies and even a coffee cake. Still trouble with hamb buns, finally gave up and just use White Corn Tortilla's.

Thanks so much for that scone recipe- I happen to have some cream so I think i will whip some up today.. Just made Pamela's Bread for 1st time and looking forward to a BLT- Dreaming of lunch....

      More great tips, and a good excuse to shop at M&S and also buy more iced buns!   I wish we had an ASDA near us, as the few times we've been to one their gluten-free pasta range seemed very reasonably priced compared to other shops.  Thanks so much, @Russ H.

      I hope you are on the mend soon. About 1 in 5 people who contracted chicken pox as a child go on to develop shingles in later life - it is not uncommon. There are 5 known members of the herpes virus family including chicken pox that commonly infect humans, and they all cause lifelong infections. As to whether coeliac disease can increase the likelihood of viral reactivation, there have been several cohort studies including a large one in Sweden suggesting that coeliac disease is associated with a moderate increase in the likelihood of developing shingles in people over the age of 50.       BFree bread is fortified with vitamins and minerals as is ASDA own-brand gluten-free bread. All the M&S bread seems to be fortified also.

      You might try Heallix.  It's a silver solution with fulvic acid. I just put the solution on with a cotton ball.  It seemed to stop the nerve pain. Again,  not in your eyes or ears.   Go to heallix.com to read more about it and decide for yourself Also,  I do think nerve and celiac combined have a lot to do with your susceptibility to shingles breaking out.

      Celiac disease requires both genetic potential and a triggering stress event to activate the genes. Otherwise it remains dormant and only a potential problem. So having the genetic potential is not deterministic for celiac disease. Many more people have the genes than actually develop the disease. But if you don't have the genes, the symptoms are likely being caused by something else.
