Sorry if this has been posted already (I'm kind of skimming the thread).

I like muffin frittatas:

crack 8-10 eggs into a bowl

add chopped veggies of choice (tomato, green onion etc. etc.)

canadian bacon, sausage and/or cheese is optional

mix it all together. pour into greased muffin tins and bake for about 10 mintues, or until cooked. you can freeze them and re-heat each morning for quick breakfasts. (I've successfully reheated in the oven and the microwave - be careful not to overcook initially if you'll use a microwave).

You go to Hunt Valley don't you? I used to go there but the store where I live in Harrisburg opened 3 weeks ago so it is so much closer. The gluten free aisle is nice and big though.

Yup. I go to Hunt Valley. I don't go too often because it's about an hour away. I didn't know Harrisburg got one. I might have to take a ride up.

I am in the suburbs of Harrisburg, and I really like the area I live in. We are trying to find a house in this area because the school district we live in is very nice.

I was just about to post it, you beat me to it!

Also, what about smoothies with different combinations of fruit, yogurt, juices, protein powder, etc.

I have a recipe for a super easy oven baked pancake that I used to make when I was eating gluten, I have tried it with a gluten-free baking mix and it came out pretty decent:

3 eggs

1/2- 1 cup gluten-free baking mix (1/2 c flour makes a lighter airier puffed up pancake and 1 c flour makes a thicker denser bread/cake like pancake)

1/2 cup water, milk, or milk substitute (i.e. rice milk)

2 tbsp butter

Preheat oven to 400 degrees. Put the butter into the oven proof skillet and then into the oven to melt. Beat the three eggs with a wisk and then add the baking mix and the liquid of choice and wisk until blended together.

Carefully take the hot skillet out of the oven and swirl around the melted butter to coat the bottom and sides of the skillet and then pour the pancake batter into the skillet. Bake for about 20 minutes (depending on which mix you use it might differ slightly)

I sliced it in wedges and topped with maple syrup and sauteed cinnamon apples.

**I experimented with Pamelas Baking and Pancake Mix, gluten-free Pantry Quick Mix, and Namaste Pancake and Waffle Mix so far, each yielded different results.

      Hello, I was very stick,  with flu like symptoms, but my virus panel came back negative and we couldn’t figure out what’s going on. The doctor then added a celiac panel.  Has anyone ever had such a dramatic change?  What are the odds this is true celiac I am going to have an endoscopy, but it’s expensive and I just feel like why can’t the labs be enough?

      Eating out in general is full of risks, but this article may help:

      This kind of question is always difficult to give a definitive answer to because of so many variables. One such variable is the sensitivity of the individual celiac to small amounts of gluten cross contamination. An amount that causes a reaction in one celiac many not in another, or at least not be discernable which, of course, does not exactly equate to being "safe".

      I see that Cracker Barrel restaurants have a gluten free menu (not all locations, but one confirmed that they do). I was wondering if it is safe for my 5 year old son with celiac disease?
