I snagged this recipe off of yahoo, it is gluten free if you make it with gluten-free products.

You can make as much or as little of this as you want.

Preheat oven to 350*

Lightly coat baking pan with gluten-free cooking spray

6 Chicken Breasts

1 8oz Chive and Onion cream cheese, I used Kraft cream cheese.

12 Slices gluten-free Bacon

Slice chicken breasts on the side, 3/4 way, creating a pocket

Spread about 2 or 3 tbsp of cream cheese in the pocket

Wrap 1 slice of bacon on one end, spiraling towards the middle, wrap 2nd slice of bacon so it covers the rest of the chicken breast

Repeat with 2nd, 3rd... chicken breasts

Place in oven

I cooked mine uncovered for about 1 hour, but I have paranoia about cooking pork and chicken together. It turned out fantastic.

You can also buy gluten-free cream cheese and add different gluten-free ingrediants to the spread.

Oh and the flavor of the cream cheese is not overpowering!

If I happened to have made a mistake and the Kraft cream cheese is not gluten-free, I appologize!!!

I did look at my gluten-free product listing and none of the banned items were on the ingrediants of the cream cheese.

I'd like to clarify: Is the pain you describe in the area just below your chest constant, or does it only appear when you start moving?

Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute. If you are interested in summaries of scientific publications on the topic of oats and celiac disease, we have an entire category dedicated to it which is here: https://www.celiac.com/celiac-disease/oats-and-celiac-disease-are-they-gluten-free/
