Impossible Chocolate Pie

This is a good inexpensive recipe: Impossible Chocolate Pie

Combine in a blender:

2 cups milk

4 eggs

2/3 C. sugar

1/2 cup gluten-free flour (or pancake mix)

1/3 C. melted margarine

1/3 c. cocoa

1 tsp. vanilla

pinch of salt

Use part of margarine and flour to grease a 10" pie plate. Blend ingredients until smooth. Bake at 350 for 30 min. or until knife inserted in middle comes out clean.

Yes, I have made pumpkin and you can make coconut cream pie. My husband is diabetic so I use mostly Splenda. I think any kind of milk substitute would work and so would egg substitute. I have heard of using pineapple. Use your imagination! Impossible pumpkin pie:

3/4 C. sugar

1\2 C. Bisquick type gluten-free (gluten-free flour works, too.)

2 Tbsp. marg.

1 can evap. milk

2 eggs

1 15 or 16 oz can pumpkin

2 1/2 tsp.pumpkin pie spice

2 tsp vanilla

Heat oven to 350. Greas 10" pie plate. Blend for 1 min. Pour into pie plate and bake at 350 for 55 minutes or until knife comes out clean.

For coconut cream: leave out cocoa (from th original impossible chocolate pie recipe) and pour i cup coconut over pie filling after it's in the pan. Now I'm off to make the impossible chocolate pie!

I did the impossible cheesburger pie, it was really good. There's a recipe for it on Bob's Red Mill website using BRM biscuit mix. I think I'll use a little less fluid and one less egg next time though, there was way too much poofy biscuit on top and it was too light.

I was going to suggest using Bob's Red Mill gluten free baking mix. I've tried it for a really simple microwave sponge cake (British Style) and it was really good. I served it with berries and whipped cream. Yummy and super fast and easy! I'll find the recipe and post it later...

How about

Magic Pie

4 eggs

1/4 margarine or butter

1 cup sugar

1/2 cup gluten free flour

1/2 teaspoon baking powder

2 cups milk

1 cup of coconut

1 tsp vanilla essence

Place all ingredients in blender and blend until mixed together

Pour into a buttered pie dish

Bake at 175 degrees celcius (350?) for an hour

When cooked the crust will be on the bottom and the custard in the middle with coconut on top.

It works.

The Magic Pie sounds good as do the others. Good ideas like this make the gluten free diet much more doable.

      Thanks rmj when I first rang up it was we can't do it without , but I talked to a lovely lady and she sorted it all out for me, so it pays to be persistent , I would have had to decline if I hadn't been given the water option too , so yes I'm glad too 😌

      Had my MRI today I didn't have to have the manitol with my allergy's , I just had a litre of water , they were great with my concerns , so let's see if anything comes of if will keep posted once I have results 👍

      Thank you ,it’s been a long road for me for having both now ,what upsets the most is that if they discovered that I also have cealiac earlier I would not have injested gluten if I was aware. Double whammy.
