Mmmmm, Wonderful Oatmeal Cookies!

I found this recipe on the back of a bag of gluten-free Oats Old Fashioned Rolled Oats. I just made them and they are delicious! ;)

Monster Oatmeal Cookies

1/4 C butter, at room temp

3/4 C sugar

3/4 C brown sugar

2 eggs

1 tsp gluten-free vanilla

1 1/4 tsp baking soda

1 C peanut butter

3 C gluten-free Rolled Oats

6 oz. gluten-free chocolate chips or M&Ms

1/2 C gluten-free sunflower seeds or chopped walnuts (optional)

Preheat oven to 350 degrees F

Beat butter & sugars until mixed well. Add eggs, vanilla, and baking soda and mix well. Add peanut butter and mix. Stir in oats, chocolate chips and nuts. Place teaspoon full of dough on a lightly greased cookie sheet about 2" apart. Bake for 10-12 minutes until lightly brown around edges.

Thanks for the recipe. I LOVE oatmeal cookies, and have missed them so much. So this recipe doesn't use any flour? That would be awesome for us....my kids devour any cookies I make, so it can get pricey going through my gluten-free flour mix so fast. We can't tolerate oats, but I think Quinoa flakes would sub pretty well. Can't wait to try!

mmm, i might just have to go out and get some gluten-free oats for this recipe :) haven't had oatmeal cookies in so long!

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
