I Found The Best Flour Blend!

I am just so pleased to have found this flour, which was recommended by my doctor of all places :) Anyway, I made their pizza crust and it was just like the real thing. Then I decided to try out plain old fashioned recipes like the Hershey's Brownie one and the chocolate chip cookie one. All I did was take the recipe and substitute the Tom Sawyer's blend in there. Of course I substituted Earth Balance butter because I'm dairy free and used the Enjoy Life chocolate chips. You cannot tell the difference! They taste just like the real thing! So check it out if you are interested - thought I'd tell you all.

I have been searching for a good all purpose flour mix....maybe this is it! Thanks so much, I never would have known. It would be great to be able to use all my old cookbooks again.

Sorry it took me awhile to reply. I just googled Hershey's Chocolate Chip Cookie Recipe and used that one. Tasted just like the real thing!

I think it's sad that they are taking advantage of people because the cost is outrageous.

According to their website, the ingredients are "a blended flour of rice and tapioca flours, xanthan gum, and unflavored gelatin". Probably white rice flour, tapioca starch, xanthan gum, and unflavored gelatin. Pretty simple, basic flour blend.

Unflavored gelatin is sold at any grocery store, made by Knox, four little envelopes per box, about $1.50. I add an envelope to my baked goods.

Everything gluten-free is expensive because of the very limited production and sales. There's nothing sinister about it.

I made tollhouse chocolate chip cookies last week using Bette Hagmans flour blend, my mother ate 3 cookies, said they were the best she's had, then I told her they were gluten-free..she had no idea!

I also made brownies using the same flour blend, awesome, can't tell they are gluten-free.

Its a whole lot cheaper to make up the mix yourself, I agree with hayley...Its crazy what they charge for these "basic" flour blends.

My whole point is that the ingredients are a "pretty, simple, basic flour blend" and they are charging an outrageous amount for it.

Normally cost per unit is based on a variety of factors, such as overhead, labor, profit margin, and costs of goods received. Supply and demand, increases or decreases that cost. White rice flour and tapioca starch are cheap. A grain mill is not that expensive. I think that their profit margin must be way high.

      Hi,  My 7 year daughter has complained of this in the past, which I thought were part of her glutening symptom, but more recently I have come to figure out it's part of her histamine overload symptom. This one symptom was part of her broader profile, which included irritability, extreme hunger, confusion, post-nasal drip. You might want to look up "histamine intolerance". I wish I had known of this at the time of her diagnosis, life would have been much easier.  I hope you are able to figure out.

      My 5yo was diagnosed with celiac last year by being tested after his sister was diagnosed. We are very strict on the gluten-free diet, but unsure what his reactions are as he was diagnosed without many symptoms other than low ferritin.  He had a school party where his teacher made gluten-free gingerbread men. I almost said no because she made it in her kitchen but I thought it would be ok.  Next day and for a few after his behavior is awful. Hitting, rude, disrespectful. Mainly he kept saying his legs were shaking. Is this a gluten exposure symptom that anyone else gets? Also the bad behavior?

      Not necessarily. The "Gluten Free" label means not more than 20ppm of gluten in the product which is often not enough for super sensitive celiacs. You would need to be looking for "Certified Gluten Free" (GFCO endorsed) which means no more than 10ppm of gluten. Having said that, "Gluten Free" doesn't mean that there will necessarily be more gluten than "Certified Gluten" in any given batch run. It just means there could be.

      I think it is wise to seek a second opinion from a GI doc and to go on a gluten free diet in the meantime. The GI doc may look at all the evidence, including the biopsy report, and conclude you don't need anything else to reach a dx of celiac disease and so, there would be no need for a gluten challenge. But if the GI doc does want to do more testing, you can worry about the gluten challenge at that time. But between now and the time of the appointment, if your symptoms improve on a gluten free diet, that is more evidence. Just keep in mind that if a gluten challenge is called for, the bare minimum challenge length is two weeks of the daily consumption of at least 10g of gluten, which is about the amount found in 4-6 slices of wheat bread. But, I would count on giving it four weeks to be sure.
