I can't believe Easter is 2 weeks away!

I usually do brunch, but am always looking for new recipes and ideas.

Anyone want to share what they will be making, or any interesting recipes to post??

Julie, how about Ambrosia? (southern through and through)

Peeled and cut up oranges (the sweeter the better)

Canned pineapple with juice

Graded coconut.

Mix all together.

I was just thinking today that I need to start planning. In the past I have made a side of salmon with a lemony, herb marinade and steamed small carrots and asparagus tossed in a light maple syrup butter. We have ham at Xmas. Once a year is enough for us. I like to use at least one seasonal ingedient. I have a rhubarb crumb cake recipe that I want to try for spring and have been playing around with the idea of making mini lemon meringe pies in my mini muffin tin.

My mom always has brunch but this is what I am bringing for myself! You can make the with or without cheese. This is how I used to make it... I don't do cheese and I cut the (rice or almond is what I use)milk in half with organic veggy broth. Also, you could do sage sausage or ham?

Crab Breakfast Strata

7 slices your favorite gluten-free bread (I use that rock hard premade stuff Energ-G white rice loaf, it makes really great cubes without crumbling and bakes very well)

1-1/2 cup grated Grueyre cheese

3/4 c Chevre (goat cheese) in small chunks

1/2 cup leeks, sliced (cleaned well of sand)

1/4 cup diced red bellpepper

1 can artichoke hearts, in brine, in quarters (drained well)

1/3 cup chopped red onion

8 ounces fresh crabmeat

5 large eggs

2-1/2 cups milk

1 tb dijon mustard

salt & pepper

Butter an 8 x 12-inch glass baking dish.

Cut bread into 1"cubes and layer across the bottom of baking dish.

In a large bowl mix together milk and eggs and dijon mustard until blended. Set aside.

Spoon Chevre & half the Grueyre, crabmeat, red onion, red bellpepper, artichoke hearts and leeks over the layer of bread cubes. Add remaining bread cubes.

Pour egg/milk mixture evenly over bread & crabmeat mixture gently. Crumble remaining Grueyre on top. Salt & pepper a little.

Cover with plastic or aluminum wrap; refrigerate overnight. Remove the next day and preheat oven to 350 degrees.

Bake 45 min to 1 hour or a little more until a knife inserted in center comes out clean.

This is great for brunch or breakfast... served with a bowl of fresh fruit

Drunken Starfruit Salad: (after enough mimosas it won't matter anyways ;)

3 Starfruit cut up

1/2 cup red Grapes

1/2 cup green Grapes

1/2 cup Orange sections

2 shots Grand Marnier

Splash of Champagne

This sounds so good, and refreshing. If I do my orange muffins with orange butter again this would be a great dish to have alongside that.

I like to do a few seasonal ingredients too, usually a glazed carrot and/or asparagus are on my menu.....or a big salad with lots of different vegetables, peas and pearl onions, marinated tomatoes, something like that.

We are the opposite, we have ham for Easter instead of Christmas :lol: and in the past I have served a potato cassarole or all different varieties of mini frittatas and roasted herbed new potatoes. I've done omelets but that was kind of hard for a crowd so I like the prepare ahead casserole or the frittatas.

Sometimes I make homemade herbed sausage patties to serve along with the ham, these are great because you can make them a week ahead and freeze them, then just thaw and warm up before you eat.

Then of course there's the bake goodies, in the past I have done cinnamon rolls, coffee cake, orange muffins. :)

But I am always looking for different ideas and recipes!

The Crab Strata sounds so yummy, that would go over big with my family and it looks like it can be modified however you want it.

The frittatas are definitely yummy, and the orange muffins so easy I just used a Namaste Muffin Mix.

I have a question about your Crab Stata Collette, what could I sub for the chevre cheese? A couple of the guests don't like goat cheese.

You could do something ultra creamy like Philadelphia Cream Cheese? That's gluten free right? :)

That's what I was thinking because goat chese is a soft cheese isn't it (I don't do much with goat cheese :lol: )

That pumpkin bread I posted the other day. I will be making that as muffins and the berry cream cheese 'cake' instead of regular coffee cake or monkey bread (recipe's on here somewhere), fruit salad and the hashbrown casserole with some sort of fancy sausage. I like stuff I can make the day before-too hectic trying to get us all ready for Easter Mass!! :D

      I have trouble with nausea. It often starts when I’m anxious about something (home repairs, sick dog) but continues long after the home is repaired or the dog is healthy again. When it happens I eat less and lose weight.  My gastroenterologist suggested ginger or peppermint tea. I don’t know if that will work or not because I haven't had the problem since she suggested it.

      Hello  I'm not sure what to think . Seems no matter what I do I get sick. I had some yogurt with only 2 grams of sugar and is labeled gluten free ...the strawberry version seemed to really set me off My jaw is burning as well as my stomach and my feet.  Horrible pain..plus acid reflux and nausea... sensitivity to touch pain. ..yikes !! I don't know if it's from the lactose in the yogurt or if I'm getting an ulcer  This condition can make you question yourself quite a bit.  Then if you are not sure the anxiety comes 😞 Does any of these symptoms sound familiar to anyone? The neuropathy is quite intense.  What do you eat or drink after this happens  Open to suggestions  Thank you

      Of course my son is on a 100% gluten free diet.  I wish his symptoms were not debilitating as there are right now.  He cannot work, even when a miniscule of cross contamination occurs.  It's not just GI distress, but intense fatigue, brain fog, depression, anxiety, insomnia, etc.  It's literally neurological inflammation.  Not to be taken lightly here.  We have sought out many other possible ways to cope during this window of time (8 months!!!!)  without success.   AN-PEP does not help and seems like studies on this are not well researched.  So, we are trying this out because research shows some promising results.  And, all participants showed no cravings afterwards, no signs of addiction.  The patch is different than the oral route such as smoking, vaping, gum, pouch, etc.

      Have you tried AN-PEP enzymes, for example, GlutenX (who is a sponsor here)? A lot of research has shown that it can break down small amounts of gluten in the stomach, before it reaches the intestines. It might be a better approach than risking nicotine addiction, and the questionable research around this. I also hope that he’s trying to be 100% Gluten-Free.

      Hi all  I was diagnosed Coeliac a few years ago and follow a gluten free diet. The list of foods that I can eat without a problem grows shorter on a weekly basis. [I also have diabetes and asthma also].  BUT the reason I am posting this is because I seem to struggle with nausea quite a lot, which is really quite debilitating, and I was wondering if others suffer from nausea, even if following a gluten free diet.
