I just went to a flying star (ABQ, NM location) and I should have taken the hint when I saw a disclaimer sign hanging on their wall. Something to the effect of "If you have a specific allergy, please be aware that specific ingredients in our products is not available."

I spoke to the manager, made sure that he knew to have the staff clean the grill, made sure that there was no dressing on the salad, and had their house salad with chicken. When I got it, I thought there was something on the chicken, but I figured it might be safe so I ate it anyway.

Stupid.

About twenty minutes later I felt really irritable and about 45 minutes later, I felt dizzy/queasy. That night I had the classic (for me) red bumps on my right hand and fingers, and itching, itching, ITCHING. This morning I woke up with the big D.

Sounds like a glutening, no?

On their website, they have NO NUTRITIONAL information available for anything they have. I searched Flying Star's website and Satellite Coffee's site (both the same I guess), for any info on that chicken, and my inquiry was directed by a link to some email address, info@flyingstar.com I think. They provided no phone number, and certainly no details on any of their products or food items.

Anyone have experience with a Flying Star? Isn't it illegal to not have that information available to customers?

      Welcome to the forum, @yellowstone! The most common ones seem to be dairy (casein), oats, eggs, soy and corn. "Formed" meat products (because of the "meat glue" used to hold their shape) is a problem for some. But it can be almost anything on an individual basis as your sensitivity to rice proves, since rice is uncommonly a "cross reactor" for celiacs. Some celiacs seem to not do well with any cereal grains.

      What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
