gluten-free/df Cream Gravy

I am looking for a recipe for a gluten-free/DF cream gravey for chicken fried streak and mashed potatoes. Anybody have any good ones. Thank you in advance.

I don't have a recipe but I have had Full Flavored Foods cream sauce & it is very good. It comes in a pkg. & you can turn it into whatever you like! Cream sauce, Broccili soup & so on. hth They have many pkgs mixes.

I made a cream gravy with sausage for dinner last night...see my post about "this week's gluten free menu" for the recipe. It turned out great! I added some garlic powder, but otherwise made it just like it says in the menu. I haven't had chicken fried steak in *ages*! Yum.

It's really good. I had it with chicken fried steak.

If you want to make it from scratch, you can do it using rice milk or soy milk. I don't have an actual recipe. I just do it until it looks and tastes right.

Start with whatever kind of grease you can have. If you have chicken fat, use that. Otherwise you can use olive oil, avocado oil, or a dairy free margarine if you can find it. Heat it or melt it and stir in about an equal amount of flour. I use sweet rice flour. You can use cornstarch but it does break down if kept on the heat for too long or if reheated. When you mix the grease/flour, you will wind up with a thick paste. Then thin it down with your rice or soy milk, adding it slowly. If you want a chicken flavored gravy, you could use 1/2 milk and 1/2 chicken broth. Use a whisk as you stir it in until you get the thickness you want. I would season this with some parsley and plenty of black pepper. But then I like a lot of black pepper. If using just the milk, you might want to add a bit of salt.

      Hi @Atl222 As @trents points out, there could be many reasons for this biopsy result.  I am interested to know, is your gastroenterologist concerned?  Also, are your blood tests showing steady improvement over the years? I remember when I had my last biopsy, several years after diagnosis, mine came back with with raised lymphocytes but no villous damage, too! In my own case, my consultant wasn't remotely concerned - in fact, he said I might still get this result even if all I ever did was eat nothing but rice and water.   My coeliac blood tests were still steadily improving, albeit slowly, which was reassuring.

      Welcome to the celiac.com community, @Atl222! Yes, your increased lymphocytes could be in response to oats or it could possibly be cross contamination from gluten that is getting into your diet from some unexpected source but not enough to damage the villi. And I'm certain that increased lymphocytes can be caused by other things besides celiac disease or gluten/oats exposure. See attachment. But you might try eliminating oats to start with and possibly dairy for a few months and then seek another endoscopy/biopsy to see if there was a reduction in lymphocyte counts.

      This is a solid, well-reasoned approach. You’re right that “koji” by itself doesn’t indicate gluten status, and the risk really does come down to which grain is used to culture it. The fact that you directly contacted Eden Foods and received a clear statement that their koji is made from rice only, with no wheat or barley, is meaningful due diligence—especially since Eden has a long-standing reputation for transparency. While the lack of gluten labeling can understandably give pause, manufacturer confirmation like this is often what people rely on for traditionally fermented products. As always, trusting your body after trying it is reasonable, but based on the information you gathered, your conclusion makes sense.
