Hi, I am looking for your favorite gluten-free/egg free/dairy free muffin, biscuit and (fluffy)pancake recipes for my dd.

I have used ener G egg replacer.

Picky clues: :huh:

She hates coconut, blueberries, zucchini, lemon, oatmeal, onions, and peppers.

Not crazy about raisins, carrots, applesauce and cooking with apples.

She loves potatoes any style, peanut butter and cashews.

She likes bananas and pumpkin.

Chocolate, sweet potatoes or pineapple is ok.

Do you have a good potato pancake recipe?

Here is mine/DH's favorite sweet potato cornbread recipe. Not exactly what you requested, but I bet it would make great cornbread muffins:

She also mentions at the bottom of the page a way to serve up the bread fried in oil. That is way yummy!

Ooh, and here's another good one. I couldn't decide if this was more of a breakfast food or a dessert, but hey, who doesn't love chocolate and strawberries together? And in a scone???

mm...thanks, they all sound good! I copied Karina's choc chip banana bread last night and as soon as I get some bananas I want to try it. I have eyed those scones before but have never tried them...they look so delish! Thanks Sweetfudge!

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye.
