Turkey Chili

Today, we had family over to watch the Eagles beat the Giants (Yippee!), and we served up some turkey chili. It just simmered on the stove all afternoon and was very good! Easy, too!

1 lb ground turkey

about 1 c. of vegetables (we used green pepper and onion)

Throw in a pan until turkey is browned, drain

Add in:

1 can (14 oz?) diced tomatoes

1 can (8 oz) tomato sauce

1 can (16 oz?) beans ----we used a mix of black beans and kidney beans, rinsed and drained

and seasonings to taste

(Cumin, Garlic Salt, Chili Powder, splash of Frank's Red Hot)

Let simmer on Low for 10-15 minutes.

Top with shredded cheddar.

We find this to be much lighter than using ground beef, and although I'm sure it would work just as well.

This reheats really well and the flavors are even better on day 2.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
