Gluten Free Chocolate Chip Pumpkin Muffins

I modified this recipe (mainly replaced the coconut flour and nuts) from the original one that I found at Open Original Shared Link

Makes about 28 muffins (was 24, but more flour = more muffins! Yay!)

1/4 cup vegetable oil

1/4 cup olive oil

2 1/2 cups sugar

2 large eggs (warmed in a bowl of hot water) (was 4 eggs)

2 cups (or one 15 oz. can) pureed pumpkin (not pumpkin pie filling)

1/2 cup water

Someone (in a different thread, I guess) suggested I try using buckwheat flour as a substitute for coconut flour (instead of using tapioca flour, as I listed in the recipe). I tried this recipe with buckwheat instead of tapioca yesterday, and my wife thought the muffins tasted the same. I liked them a little better with the tapioca, but they are good either way. I also cut down even more on the chocolate chips this time around. If you REALLY like chocolate chips in your muffins, then use what the recipe calls for. We have two little kids eating the muffins, and we got tired of melted chocolate all over their faces and hands and clothes and the high chair tray (my 1 year old daughter even started crying the other day b/c she thought the melted chip on her finger was a bug, and she is terrified of bugs). Long story short, use either flour and cutting down on the chips a bit might be worth your while if you are trying this recipe.

mmm, these sound really good :) i love me some chocolate pumpkin muffins! i found a great recipe that i converted into more of a cupcake than a muffin. i think i'm gonna have to give this one a go :) thanks for sharing!

      It could well be a new intolerance developing.  Does your diet incorporate pure oats i.e. those safe for coeliac consumption?  I find I can only tolerate a certain amount, same goes for dairy in fact, then I start to get gastric symptoms.   Or have you started consuming a new type of gluten-free bread, or more bread than normal?  I remember reading on this forum once a woman saying she had started to eat a lot of loaves made with oat flour and her coeliac symptoms kicked off again.  I am sure you know this, but some coeliacs cannot tolerate pure oats.

      I eat a lot of dairy but its intermittent is this burning so I would assume it would happen all the time. Plus I have been tested for lactose intolerance  etc and I am fine and the other symptoms of that I don't get. As a aside  my dad died last month after a long illness so I wonder if the stress of that might be a influence as a bodily reaction to stress.

      You should be fine.  You may start feeling better within a few days.  Someone who is very low in thiamine may notice improvement within hours.   Did you get the NeuroMag  or another magnesium supplement?

      Yes Bobs redmill cgf oatmeal I started when I became gluten-free. So taking all 3 with breakfast should work? Will I notice any reactions getting used to these or should I be fine. Thanks
